Understanding Your Low Carb Starter:
- Different Behaviour: Your Sinless Sourdough starter behaves differently from traditional wheat-based starters. It maintains a thicker consistency and develops both large and small gas bubbles during fermentation. The coconut flour makes it appear grainy after about 12 hours—simply add water during feeding to restore a pancake batter consistency.
- Growth Pattern: After several feedings, your starter will become more robust and may begin to grow more quickly.
- Aroma: When healthy, your starter will develop a fresh, tangy scent.
Ingredient Guidelines:
- Consistency Is Key: Maintain the same two low carb ingredients throughout your starter’s life. For example, if you begin with coconut and almond flours, don’t switch to flax meal and lupin flour later.
- Recipe Compatibility: For best results, use your starter in recipes that contain the same low carb ingredients. A coconut/almond flour starter works optimally in bread recipes that also use coconut and almond flours.

To help you get started, I’ve provided a recipe for the Sinless dehydrated starter combined with coconut flour and almond flour. This blend delivers fantastic results and is perfect for low-carb sourdough discard recipes. There are several other low-carb ingredient combinations that will bring your Sinless Sourdough™ dehydrated starter to life, and all of these are available through the membership. For more advanced baked goods like artisan breads (boules and batards), French baguettes, Montreal-style bagels, street pretzels, and sandwich loaves, you’ll need to upgrade to a membership. These recipes require video training, which is available exclusively through the membership.
Feeding Ingredients for Starter
- 1 tbsp Coconut Flour
- 1 tbsp Almond Flour
- Spring Water (enough to create pancake-batter consistency)
Equipment Needed
- 1 (6-ounce) 500mL mason jar with lid
- 1 chopstick (for mixing)
Step-by-Step Instructions
- Combine your Sinless Sourdoughâ„¢ starter packet with your chosen flours in a glass jar.
- Add spring water, 1 tbsp at a time, mixing with the chopstick until the mixture reaches a pancake-batter consistency.
- Cover loosely and place in a warm, draft-free spot in your kitchen.
- Feed your starter every 12 hours with:
- 1 tbsp coconut flour
- 1 tbsp almond flour
- 4 to 8 tbsp spring water (as needed)
- Continue feeding the starter for 5-6 days until it reaches the top of the jar, forms large air pockets, and has a fresh, tangy aroma.
TROUBLESHOOTING TIPS:
Your almond and coconut flour starter will rise to the top of the jar, but it behaves differently from traditional wheat starters. The texture will alternate between two states:
- Grainy texture: This indicates it’s time for a feeding
- Smooth, pancake-batter consistency: This is normal after being freshly fed
Your starter is ready to use when it:
- Reaches the top of the jar
- Shows large air pockets (signs of healthy fermentation)
- Has a fresh, tangy aroma
