5 Discard Diva Low Carb High-Protein Biscuits

This is a simple, protein-packed low-carb sourdough bread recipe that combines cottage cheese with almond flour starter for a nutritious, gluten-free loaf. With minimal ingredients and the tangy flavor from sourdough fermentation, this bread delivers a soft texture and satisfying taste while keeping carbs low. The cottage cheese adds moisture and extra protein, making it perfect for sandwiches or toast.

Ingredients

Wet Ingredients

  • ½ cup (120 ml) living starter (Almond Flour + Coconut Flour or Gluten-Free Biome Boss™)
  • 1 cup (226 g) 4% fat cottage cheese
  • 2 eggs
  • 2 teaspoons (10 ml) apple cider vinegar (optional)

Dry Ingredients

  • 2 cups (192 g) extra fine or sifted almond flour
  • 3 tablespoons (27 g) whole psyllium husks  (+ 1 tablespoon more if needed)
  • 1 teaspoon (6 g) salt
  • 2 teaspoons or 1 tablespoon (8-12 g) baking powder (add more when adding heavy ingredients)

Topping

  • 1 egg (for egg wash)

Note: Metric conversions are approximate. For almond flour, weights can vary by brand due to different densities. Psyllium husk powder is particularly light and fluffy, so weight measurements are more accurate than volume.

Instructions

  1. Preheat your oven to 375°F (180°C) and line a baking sheet with parchment paper.
  2. Your Sinless living starter (specifically the coconut & almond flour blend) will be dry and crumbly.  That’s perfect.  Do not add water.
  3. In a mini mixer or blender combine the Sinless living starter, cottage cheese, eggs and apple cider vinegar.
  4. Transfer to a large mixing bowl.
  5. Add almond flour, psyllium, salt and baking powder. Mix into a moist dough.
  6. If the dough is too wet add one tbsp at a time of psyllium.
  7. If the dough is too dry add 1 tbsp at a time of milk (cow’s, almond, coconut)
  8. Shape moist dough into a ball, pulling in all pieces.
  9. Cover the bowl with a clean dish towel.
  10. Refrigerate, letting the dough stiffen for 30 to 60 minutes.
  11. The dough will now be firmer and will hold together when molded.
  12. Divide the dough into 6 equal portions.
  13. Roll each portion into a ball.
  14. Slightly flatten each ball into a mini hockey-puck shape and set on parchment.
  15. Whisk the egg. Brush egg wash on top of each biscuit.
  16. Bake for 25 to 30 minutes or until golden.
  17. Remove from oven and immediately transfer to a cooling rack.
  18. Enjoy!

  • Heart-Smart Option: Swap 4% cottage cheese with fat-free cottage cheese plus 2 to 3 tablespoons of avocado or olive oil
  • Less Tang For Savoury Options: Add 2 to 2 tbsp powdered sweetener to dough
  • Fresh Twist: Add fresh lemon juice to add citrus tanginess to dough (blueberry and lemon biscuits for example)
  • Flavour Boost: Add a tablespoon of nutritional yeast for umami depth and roundness of flavour of biscuits
