Ingredients

  • 2 tablespoons (28 g) coconut oil or butter, melted
  • 1 large egg
  • 1 teaspoon (5 mL) caramel extract or vanilla extract
  • 2 tablespoons (24 g) brown sugar sweetener
  • 1/4 cup (28 g) blanched almond flour
  • 1/4 cup (40 g) hemp hearts
  • 2 tablespoons (14 g) chopped nuts (walnuts, pecans, or peanuts)
  • 2 tablespoons (10 g) unsweetened shredded coconut
  • 1/4 cup (60 mL) Lakanto Sugar-Free Chocolate Baking Chips Sweetened with Monk Fruit

Instructions

  1. In a bowl, combine coconut oil, egg, caramel extract, brown sugar sweetener, almond flour, hemp hearts, nuts, and unsweetened shredded coconut.
  2. Mix until fully combined and a thick batter forms.
  3. Lightly grease a 5½ x 5½-inch (14 x 14 cm) microwave-safe glass dish.
  4. Spread mixture evenly into the dish.
  5. Microwave for 90 seconds.
  6. Allow to cool completely to set the structure.
  7. Add chocolate chips to a microwave-safe bowl.
  8. Microwave in 30-second intervals, stirring between each interval, until fully melted.
  9. Drizzle or spread melted chocolate over cooled bars.
  10. Refrigerate until chocolate is firm.
  11. Cut into 4 squares and serve.
