These rich, fudgy Keto cottage cheese blueberry brownies are packed with protein from cottage cheese and protein isolate, making them the perfect guilt-free treat for your low-carb lifestyle. Bursting with juicy blueberries and delivering 12-15g of protein per serving with only 3-4g net carbs, they’re incredibly moist, satisfying, and prove that keto desserts can be absolutely delicious.

Ingredients

Wet Ingredients:

  • 1 cup (225 g) cottage cheese
  • 2 large eggs
  • ½ cup (115 g) grass-fed butter (or butter of choice), melted
  • 1 teaspoon (5 ml) vanilla extract

Dry Ingredients:

  • 1 cup (96 g) almond flour
  • 1 cup (120 g) unsweetened protein isolate
  • ½ cup (50 g) cocoa powder (Fry’s is zero carb)
  • ½ cup (100 g) sweetener of choice
  • 2 to 4 tablespoons (30-60 ml) water (if dough is too dry)

Mix-ins:

  • ¼ to ½ cup (35-70 g) dried blueberries

Optional Topping:

  • Melted sugar-free chocolate for coating

Instructions

  1. Preheat oven to 350°F (175°C). Spray a brownie pan with avocado oil spray or line with parchment paper.
  2. Blend wet ingredients: In a blender or small food processor, combine cottage cheese, eggs, melted butter, and vanilla extract. Blend until completely smooth with no lumps.
  3. Mix dry ingredients: In a large glass bowl, whisk together almond flour, protein isolate, sweetener, and cocoa powder until well combined.
  4. Combine: Pour the wet mixture into the dry ingredients. Mix thoroughly until a thick batter forms. If the mixture seems too dry or difficult to mix, add water 1 tablespoon at a time until desired consistency is reached.
  5. Add blueberries: Gently fold in the dried blueberries until evenly distributed.
  6. Bake: Transfer batter to the prepared brownie pan and spread evenly. Bake for 20-25 minutes, or until the brownies are firm to the touch. Test the center with a toothpick—it should come out mostly clean.
  7. Cool: Remove from oven and allow brownies to cool completely in the pan.
  8. Optional chocolate topping: If desired, pour melted sugar-free chocolate over the cooled brownies. Transfer to the refrigerator and chill for 2-3 hours until the chocolate coating hardens.
  9. Serve: Cut into 12 equal pieces and enjoy!

  • Cottage Cheese: 1 cup used in recipe provides 17 grams of protein

  • Almond Flour: Adds most of the carbs (~8g net for full recipe)

  • Blueberries: Optional —

    • ¼ cup adds 1.8g net carbs

    • ½ cup adds 3.6g net carbs

Storage

Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.

Notes

  • For best results, use full-fat cottage cheese
  • The protein isolate helps create a firmer texture; whey or plant-based isolate both work
  • Dried blueberries can be substituted with sugar-free chocolate chips or other keto-friendly add-ins
