Make 90 second keto caramel turtle brownies with almond flour, caramel extract, and a chocolate-walnut topping — just 1.2g net carbs per blondie.

Ingredients

Blondie Layer

  • 2 tablespoons (30 mL) unsalted butter
  • 3 tablespoons (45 mL) brown sugar sweetener
  • 1 large egg
  • 2 tablespoons (30 mL) low carb milk or heavy cream (optional)
  • 1 to 1½ teaspoons (5–7.5 mL) caramel extract
  • ½ cup (56 grams) blanched almond flour
  • 1 teaspoon (5 mL) baking powder
  • ½ teaspoon (2.5 mL) sea salt
  • 2 tablespoons (30 mL) toasted walnut pieces

Chocolate Turtle Topping

  • ⅓ cup (55 grams) sugar-free chocolate chips
  • ¼ teaspoon (1 mL) coconut oil
  • 2 tablespoons (30 mL) toasted walnut pieces
  • A few sugar-free chocolate chips for garnish

Instructions

  1. Melt the butter in the microwave.
  2. Pour the melted butter into a small mixing bowl.
  3. Add the brown sugar sweetener, egg, optional low carb milk or heavy cream, and caramel extract. Whisk until smooth.
  4. Add the almond flour, baking powder, and sea salt. Stir until fully combined.
  5. Fold in the toasted walnut pieces.
  6. Lightly spray a 5.5″ × 5.5″ (14 × 14 cm) microwave-safe glass dish with avocado oil spray.
  7. Pour the batter into the prepared dish and spread evenly.

Microwave

For a dense, fudgy blondie:

  • Leave out the milk or heavy cream.
  • Cover with a microwave-safe cover.
  • Microwave on High for 90 seconds.

For a moist, cake-like blondie:

  • Add the milk or heavy cream.
  • Do not cover.
  • Microwave on High for 2 minutes.
  1. Remove from the microwave and allow the blondie to cool completely.

Chocolate Turtle Topping

  1. Combine the sugar-free chocolate chips and coconut oil in a microwave-safe bowl.
  2. Microwave in 30-second intervals, stirring after each interval, until melted and smooth.
  3. Pour the melted chocolate over the cooled blondie.

Finish

Option 1 – Individual Blondies

  • Remove the blondie from the dish and cut into 4 squares.
  • Place each blondie into a paper cupcake liner.
  • Garnish with the toasted walnut pieces and a few sugar-free chocolate chips.

Option 2 – Family Style

  • Leave the blondie in the glass dish.
  • Garnish with the toasted walnut pieces and a few sugar-free chocolate chips.
  • Allow the chocolate to set before cutting into 4 squares and serving.
