First, a Quick Definition

What Is a Blondie?

A blondie is essentially a brownie without the cocoa. It’s the same dense, fudgy, one-bowl style of bar dessert, but instead of chocolate carrying the flavour, it’s built on butter, brown sugar, and vanilla — a “blond” version of the classic brownie. Because the base itself is chocolate-free, blondies are the perfect canvas for other flavours to take the lead.

In this recipe, that flavour is turtle candy: caramel, toasted walnuts, and a chocolate topping. The caramel-forward blondie base lets the caramel extract shine through in a way a cocoa-heavy brownie never could, while the melted chocolate layer on top still delivers that classic turtle candy finish.

🐢 Caramel, Chocolate, Toasted Walnuts — Ninety Seconds

Turtle candy flavour — caramel, chocolate, and toasted walnuts — is one of those combinations that feels impossible to recreate on keto without a long ingredient list or a trip to a specialty store. This 90 second keto caramel turtle blondie proves otherwise. One bowl, one dish, and a microwave get you a fudgy caramel blondie base finished with a glossy chocolate turtle topping.

This isn’t a thin, eggy microwave mug cake. The almond flour base bakes up dense and blondie-like, the caramel extract does the heavy lifting on flavour without any actual caramel sugar, and the melted chocolate topping sets into that classic turtle candy shell once it cools.

The Appeal

Why You’ll Love These Turtle Blondies

  • Just 1.2g net carbs per blondie
  • 5.4g protein per serving from almond flour and egg
  • Ready in under 5 minutes, start to finish
  • Two texture options: dense and fudgy, or moist and cake-like
  • Classic turtle candy flavour — caramel, chocolate, toasted walnut
  • Makes 4 — perfect portion control, no leftover temptation

Perfect for keto dieters, chocolate-caramel lovers, and anyone who wants a real dessert without turning on the oven.

The Difference

What Makes This Turtle Blondie Different? 🧒

Most “turtle” keto desserts try to build an actual caramel sauce from scratch — heating sweetener until it browns, then whisking in butter and cream and hoping it doesn’t seize or crystallize. It’s fussy, and it’s easy to ruin in seconds.

This recipe skips all of that. Caramel extract delivers the flavour directly into the blondie batter, so there’s no sugar work involved at all. The toasted walnuts get folded into the base and pressed into the topping, giving you that turtle candy crunch in every bite instead of just on top.

Two Ways to Bake It

Dense & fudgy: leave out the milk or cream, cover the dish, microwave 90 seconds

Moist & cake-like: add the milk or cream, leave uncovered, microwave 2 minutes

The Science

Why It Works 💪

  • Ultra Low Net Carbs: Only 1.2g per blondie
  • Solid Protein: 5.4g per serving from almond flour and egg
  • Simple Ingredients: Everything found at any grocery store
  • No Oven Needed: One dish, one microwave, no cleanup crew
  • Two Textures: Adjust the recipe to your mood with one ingredient swap

Almond flour provides the structure that flour normally would, without the carb load. Butter and egg bind everything together and keep the crumb tender rather than dry. The chocolate topping is melted separately and poured over a fully cooled base, which is what lets it set into a proper firm shell instead of soaking into the blondie.

What You’ll Need

Ingredients (Makes 4 Blondies)

Dish: 5.5″ × 5.5″ (14 × 14 cm) microwave-safe glass dish

Blondie Layer

  • 2 tablespoons (30 mL) unsalted butter
  • 3 tablespoons (45 mL) brown sugar sweetener
  • 1 large egg
  • 2 tablespoons (30 mL) low carb milk or heavy cream (optional)
  • 1 to 1½ teaspoons (5–7.5 mL) caramel extract
  • ½ cup (56 grams) blanched almond flour
  • 1 teaspoon (5 mL) baking powder
  • ½ teaspoon (2.5 mL) sea salt
  • 2 tablespoons (30 mL) toasted walnut pieces

Chocolate Turtle Topping

  • ⅓ cup (55 grams) sugar-free chocolate chips
  • ¼ teaspoon (1 mL) coconut oil
  • 2 tablespoons (30 mL) toasted walnut pieces
  • A few sugar-free chocolate chips for garnish

Let’s Bake

Directions

Blondie Layer

  1. Melt the butter in the microwave
  2. Pour the melted butter into a small mixing bowl
  3. Add the brown sugar sweetener, egg, optional low carb milk or heavy cream, and caramel extract. Whisk until smooth
  4. Add the almond flour, baking powder, and sea salt. Stir until fully combined
  5. Fold in the toasted walnut pieces
  6. Lightly spray a 5.5″ × 5.5″ (14 × 14 cm) microwave-safe glass dish with avocado oil spray
  7. Pour the batter into the prepared dish and spread evenly

Microwave

For a dense, fudgy blondie: leave out the milk or heavy cream. Cover with a microwave-safe cover. Microwave on High for 90 seconds.

For a moist, cake-like blondie: add the milk or heavy cream. Do not cover. Microwave on High for 2 minutes.

Remove from the microwave and allow the blondie to cool completely.

Chocolate Turtle Topping

  1. Combine the sugar-free chocolate chips and coconut oil in a microwave-safe bowl
  2. Microwave in 30-second intervals, stirring after each interval, until melted and smooth
  3. Pour the melted chocolate over the cooled blondie

Finish

Option 1 — Individual Blondies: Remove the blondie from the dish and cut into 4 squares. Place each blondie into a paper cupcake liner. Garnish with the toasted walnut pieces and a few sugar-free chocolate chips.

Option 2 — Family Style: Leave the blondie in the glass dish. Garnish with the toasted walnut pieces and a few sugar-free chocolate chips. Allow the chocolate to set before cutting into 4 squares and serving.

Using Alternative Baking Methods

You can also make these brownies in a conventional oven, convection oven, air fryer, or toaster oven. Bake at 350°F (175°C) for approximately 8 to 12 minutes, depending on the method you use. Every appliance runs a little differently, so watch closely near the end and pull the brownies as soon as the top looks set.

Troubleshooting

Common Mistakes

Chocolate Slides Off Instead of Setting

The blondie base must be completely cool before you pour the chocolate on top — a warm base melts the topping into the crumb instead of letting it set as a shell.

Blondie Turns Out Dry or Rubbery

Microwave power varies — start checking at the low end of the time range and stop as soon as the top looks set, even if it still seems slightly soft.

Chocolate Seizes Instead of Melting Smooth

Stick to the 30-second intervals and stir between each one — overheating sugar-free chocolate chips in one long burst is the most common cause of a grainy, seized topping.

Caramel Flavour Tastes Weak

Caramel extract brands vary in strength — start at 1 teaspoon and go up to 1½ teaspoons if you want it more pronounced next time.

Make It Your Own

Variations

Pecan Turtle

Swap the toasted walnuts for toasted pecan pieces for the more traditional turtle candy nut.

Sea Salt Finish

Sprinkle a pinch of flaky sea salt over the chocolate topping before it sets for a salted caramel edge.

Extra Fudgy

Stick with the dense, fudgy microwave method and add an extra tablespoon of chocolate chips folded directly into the batter for a double-chocolate turtle brownie.

Serving Ideas

How Should You Serve These Turtle Brownies?

Warm with a scoop of sugar-free vanilla ice cream  •  With a dollop of unsweetened whipped cream  •  Alongside black coffee or espresso  •  Drizzled with extra melted chocolate for a special occasion

Keeping It Fresh

Storage

Store covered in the refrigerator for up to 5 days once the chocolate topping has fully set. Bring to room temperature for a few minutes before serving, or enjoy straight from the fridge for a firmer, fudgier bite.

Setting Expectations

Practice Batch Philosophy

Microwave wattage varies from kitchen to kitchen, so your first batch is your calibration run. If the blondie comes out too soft, add 10-15 seconds next time. If it’s dry, pull it earlier. Once you know your microwave, this becomes a two-minute dessert you can make on repeat.
