I’m Shari MAC, a proud Métis woman and the founder of Sinless Sourdough. In just 16 months, I lost my father (November 26, 2021), my younger brother (October 11, 2022), and my mom (March 12, 2023) to heart disease.

During that time, I found myself in the deepest, darkest place I’ve ever known. Grief consumed me, and my mind spiraled into an unrelenting cycle of despair. I questioned everything—my purpose, my life—and even found myself consumed by thoughts of ending it all. I thought about how to escape the pain, how to make it stop. But through it all, my husband, Shawn, remained my rock. His love was unwavering, and he never stopped reminding me of how much he needed me to keep going, to survive.

One afternoon, during one of my usual walks, I found myself wandering aimlessly, burdened by thoughts too heavy to carry. I ended up on a quiet park bench in a cemetery, the weight of my grief so suffocating that I felt rooted to the spot. Hours passed, but I couldn’t move. I just sat there, lost in the stillness, trapped in the silence. 

Then, something shifted. It wasn’t loud or dramatic—it wasn’t a voice, but it was something more profound than anything I’d ever experienced. It was a presence, clear and undeniable.

I heard it, not with my ears, but deep within me: Find purpose, and honor your family.

In that moment, I felt a spark of light break through the darkness, a lifeline I hadn’t realized I was looking for. It was as if the Great Creator had reached down, pulling me out of the depths of despair and offering me a way forward. That divine guidance became my turning point, a call to action that gave me new purpose.

With that newfound clarity, I channeled my energy into something that honored my family and gave my life meaning once more – creating Sinless Sourdough, a business dedicated to transforming heart health across North America through a low-carb lifestyle.

Sinless Sourdough was born. I became a solopreneur. 

I’ve spent over 30 years in the gourmet food world as a food and wine columnist, best-selling cookbook author, TV co-host (with Al Waxman), recipe developer, and keynote speaker. Yet, despite my career success, I’d gained 70 pounds over the years.

But through faith, perseverance, and a commitment to living a low-carb lifestyle, I shed those 70 pounds and reclaimed my health. Today, alongside Shawn—18 years my junior—I live a vibrant, low-carb life. I’m living proof that even in our darkest moments, we can be guided toward healing, hope, and transformation by a higher power.

The Mission: At Sinless Sourdough, my mission is to revolutionize how people think about our favorite comfort food – bread. I offer a path to baking a healthier low-carb sourdough version that supports cardiovascular health and well-being.

My Love of Bread: My passion for bread runs deep, rooted in my Métis heritage. European baking techniques introduced by fur traders from the Hudson’s Bay and North West Companies blended with Indigenous traditions to bring leavened bread to remote trading posts. This cross-cultural exchange led to the creation of Canadian Bannock, a beloved staple in Métis culinary traditions. The Métis people, the children of French and Scottish fur traders and Indigenous women, played a crucial role in merging European and Indigenous food practices.

Sourdough also has its place in Canadian history. The spread of the Klondike dehydrated sourdough starter during the Yukon Gold Rush is legendary, though much of the story is based on myth and anecdotal accounts. What we do know is that, during the Klondike Gold Rush of 1897-1898, thousands of miners took this humble, durable sourdough starter with them into the wilds of the Yukon. As they trekked through remote areas, sourdough became their sustenance. Some of these starters were passed down for generations, and through trade with fur traders and Indigenous peoples, it’s believed that the sourdough starter spread across Canada, becoming part of our culinary history.

For me, baking is not just a skill—it’s part of who I am. At 12, I started baking banana bread for my family. Weekends at the cottage were spent around the fire pit, where my Métis mother would make Bannock dough, and my siblings and I would bake it on sticks over the flames. On Sunday mornings, my father would fry up Flitterdabs (toutons) in an iron skillet—a cherished family bread recipe passed down through his Newfoundland family.

Sourdough, to me, feels like a healing food—a tangible connection to the land, my heritage, and the generations of Canadians whose stories are woven into the bread we bake.

 


The Quest for Authentic Low-Carb Sourdough

What is “Authentic Low-Carb Sourdough”? A quick search for “low-carb sourdough” will show you recipes that use tangy ingredients like vinegar, yogurt, or buttermilk. While these ingredients mimic the flavor of sourdough, they lack the essential Lactobacillus culture, the probiotic powerhouse that gives sourdough its health benefits.

Sinless Sourdough Carbs? A typical slice of supermarket multi-grain sourdough can contain up to 28 grams of net carbs. If you use two slices for a sandwich, you’ve already exceeded the 50 grams of net carbs allowed on a strict low-carb diet.

In comparison, most sourdough breads fall within this high-carb range, contributing to weight gain, inflammation, diabetes, and heart disease.

But Sinless Sourdough is different. With only 6.39 to 8.33 grams of carbs per slice, you can have two slices (12.78 to 16.66 grams of carbs) and still stay well within your daily carb limit on a strict low-carb diet—using just 25% to 33% of the carbs you’re allowed.

My journey to bake low carb sourdough began with a frustrating search for an authentic recipe, only to find inadequate alternatives:

  • Sourdough starters using almond flour or other low carb flours, which lack fermentable carbohydrates that get more potent with time and can be used again and again. 
  • Recipes relying on yogurt, apple cider vinegar, buttermilk, lemon juice, or with baker’s yeast to mimic sourdough flavor and rise.  

These recipes, while producing subtle tangy bread, fail to capture the true fermentable science and health benefits of authentic sourdough. 

After numerous trials and dedicated daily baking, I carefully studied how authentic sourdough culture interacts with low-carb ingredients. This extensive experimentation led me to create a recipe and methodology for Sinless Sourdough—an innovation that offers all the health benefits of traditional sourdough in an exceptionally low-carb form.

The Power Of Sourdough

I believe low carb sourdough is one of the most powerful fermented foods on the planet. The diverse microorganisms in sourdough culture help to enrich and balance the gut microbiome, promoting overall digestive health and immune function, which in turn leads to a cascade of beneficial effects throughout the body:

    1. Sourdough fermentation breaks down gluten proteins, potentially making the bread easier to digest for some people with gluten sensitivity.
    2. The fermentation process reduces phytic acid levels, improving mineral absorption from the bread.
    3. Sourdough fermentation breaks down proteins into smaller peptides and free amino acids, making them more readily absorbed and utilized by muscles and other protein-dependent tissues throughout the body. This pre-digestion of proteins enhances the bread’s nutritional value, potentially supporting muscle growth, repair, and overall bodily functions that rely on protein.
    4. The glycemic index of sourdough bread (around 54) is lower than that of white bread (71), resulting in a more gradual release of glucose into the bloodstream.
    5. Consuming sourdough bread can lead to a lower insulin response compared to regular bread.
    6. Sourdough fermentation cultivates various strains of lactic acid bacteria, which can act as probiotics in the gut.
    7. The fermentation process creates prebiotics, which feed beneficial gut bacteria.
    8. Some studies suggest that sourdough bread may help reduce digestive discomfort, such as bloating and gas.
    9. The slower digestion of sourdough bread may increase feelings of fullness and satiety.
    10. The lower glycemic impact of sourdough bread can help maintain more stable blood sugar levels, potentially benefiting appetite control and long-term weight management.

Former Career

A little about my former career, I am grateful to be a best-selling and International award-winning cookbook author.  As mentioned, I spent over three decades immersed in the world of traditional wine and gourmet food.  I co-hosted a national TV series called Simply Wine and Cheese with the late Al Waxman, known for his role as Lieutenant Bert Samuels in the American TV series Cagney and Lacey.

I also worked as a syndicated columnist, food editor, recipe developer, author, TV host and speaker.
My work in sensory science as it pertains to wine and food pairing has been implemented into programs at George Brown College and CCOVI at Brock University in Ontario, Canada, for training chefs and sommeliers. I am also the creator of the Icewine Flavour Wheel and the Canadian Wine Wheel.

(2006) supports the role of low-carb diets in reducing risk factors for metabolic syndrome, such as obesity, insulin resistance, and high cholesterol levels. These findings underscore the potential of low carb eating patterns in managing chronic diseases and improving long-term health outcomes.

(2007), Hammes & Hertel (2007), and Lloyd et al. (2015). Additional relevant studies are Rizzello et al. (2007), Fois et al. (2011), De Vuyst et al. (2014), Gobbetti et al. (2005), and Coda et al. (2017), all of which explore various aspects of sourdough’s nutritional and digestive health benefits.
