Keto cottage cheese sourdough muffins deliver 7g protein per serving with only 5g net carbs. These chocolate chip cottage cheese muffins use living sourdough starter and blended cottage cheese for moist, fluffy texture without any cottage cheese taste.

Ingredients

Wet Ingredients

  • 1 cup (244 g) 4% small-curd cottage cheese
  • 4 large eggs (about 202 g without shells)
  • ½ cup (120 g) Biome Boss™ living sourdough starter

Dry Ingredients

  • 2¼ cups (198 g) sifted almond flour
  • 1 tbsp (13 g) aluminum-free baking powder
  • ½ tsp (1.5 g) xanthan gum
  • ½ cup (96 g) brown sugar-style sweetener (optional) (Use only if you like your muffins very sweet)

Add-ins

  • ½ to 1 cup (85–170 g) sugar-free / no-sugar-added chocolate chips
    • Fold ¾ of the chips into the batter
    • Reserve ¼ of the chips for topping

  • Cooking oil spray or muffin liners

Instructions

  1. Prepare the pan Grease 12 cavities of a standard muffin pan with cooking spray or line with liners.
  2. Blend the cottage cheese Add the 4% cottage cheese to a mini blender or chopper. Blend until completely smooth.
  3. Mix wet ingredients Transfer blended cottage cheese to a large mixing bowl. Add the eggs and Biome Boss™ living starter. Mix with a hand mixer until smooth and fully combined.
  4. Sift in dry ingredients Place a fine-mesh sieve over the bowl of wet ingredients. Add the almond flour, baking powder, xanthan gum, and optional brown sugar sweetener to the sieve and sift directly over the bowl.
  5. Combine Mix gently just until incorporated. Do not overmix.
  6. Add chocolate chips Fold ¾ of the chocolate chips into the batter.
  7. Rest the batter Let batter rest 5 minutes to allow the almond flour, xanthan gum, and starter to fully hydrate.
  8. Fill muffin pan Scoop about ¼ cup batter per muffin into prepared pan. Sprinkle remaining chocolate chips evenly over the tops.
  9. Bake Bake for 20 to 30 minutes, until muffins are deep golden brown and a toothpick inserted comes out clean.
  10. Cool Cool in pan for 5–10 minutes, then transfer to a rack.
