Keto Strawberry Cheesecake Mug Cake

Ingredients

  • 5 ounces (142g) Cream Cheese, softene
  • 2 tablespoons (24g) Powdered Sweetener, (such as Allulose or Monk Fruit)
  • 2 tablespoons (30ml) Sour Cream 
  • 1 large (50g) Egg, beaten
  • ½ teaspoon (2.5ml) Vanilla Extract
  • ½ teaspoon (2.5ml) Lemon Juice (optional)

Instructions

  1. Cream the Base: Combine the softened cream cheese and powdered sweetener in a mixing bowl, beating with hand mixer until the texture is silky and free of lumps.
  2. Blend the Batter: Add the egg, sour cream, vanilla, and lemon juice (optional). Mix until the batter is smooth and well-combined.
  3. Prepare the Mugs: Lightly grease two microwave-safe mugs or ramekins with avocado oil or spray and divide the strawberry batter equally between them.
  4. Microwave: Heat each mug individually for 60 seconds.  If not quite done, microwave for 10 second intervals more until done.
  5. Assess the Texture: Remove from the microwave when the edges are set and opaque, but the center remains slightly wobbly and glossy.
  6. Rest and Set: Allow the cakes to cool at room temperature for 10 minutes.
  7. Chill: For the best consistency, refrigerate for at least 1 hour. This allows the fruit juices and fats to firm up into a traditional cheesecake texture.
  8. Top with sugar free strawberry jam, or combination of chopped fresh strawberries in sugar free strawberry jam in microwave for 1 minute, or just fresh strawberries.  Enjoy.
