The Science

Why It Works

Most “mug cakes” are spongy or bread-like because they rely on flour substitutes. This Keto Strawberry Cheesecake works because it is essentially a crustless, steam-baked cheesecake. The microwave acts as a rapid heat source that sets the egg proteins and cream cheese quickly, while the moisture from the sour cream ensures the result is creamy rather than rubbery.

What to Expect

Taste and Texture

Expect a profile that is rich, velvety, and balanced by the natural acidity of lemon and fresh strawberries. Unlike a dry almond-flour cake, this has the “tongue-coating” richness of a high-end dessert. The diced strawberries provide bursts of brightness that cut through the density of the cream cheese.

What You’ll Need

Ingredient Breakdown (Makes 2 Mug Cakes)

  • 5 ounces (142g) Cream Cheese: The structural base providing the signature cheesecake density.
  • 2 tablespoons (24g) Powdered Sweetener: Using allulose or monk fruit ensures a smooth mouthfeel without the “crunch” of granulated sugar substitutes.
  • 2 tablespoons (30ml) Full Fat Sour Cream: Adds necessary moisture and a traditional tang.
  • 1 large (50g) Egg: The binder that allows the cheesecake to set.
  • ½ teaspoon (2.5ml) Vanilla Extract: Enhances the sweetness of the cream cheese.
  • ½ teaspoon (2.5ml) Lemon Juice: Optional.

What You’ll Need

Equipment

  • Medium mixing bowl
  • Whisk or small immersion blender
  • Two microwave-safe mugs or ceramic ramekins (approx. 8 oz capacity)
  • Microwave

Let’s Bake

Step-by-Step Instructions

Cream the Base

Combine the softened cream cheese and powdered sweetener in a mixing bowl, beating with a hand mixer until the texture is silky and free of lumps.

Blend the Batter

Add the egg, sour cream, vanilla, and lemon juice (optional). Mix until the batter is smooth and well-combined.

Prepare the Mugs

Lightly grease two microwave-safe mugs or ramekins with avocado oil or spray and divide the strawberry batter equally between them.

Microwave

Heat each mug individually for 60 seconds. If not quite done, microwave for 10 second intervals more until done.

Assess the Texture

Remove from the microwave when the edges are set and opaque, but the center remains slightly wobbly and glossy.

Rest and Set

Allow the cakes to cool at room temperature for 10 minutes.

Chill

For the best consistency, refrigerate for at least 1 hour. This allows the fruit juices and fats to firm up into a traditional cheesecake texture.

Top with sugar-free strawberry jam, a combination of chopped fresh strawberries in sugar-free strawberry jam microwaved for 1 minute, or just fresh strawberries. Enjoy.

Troubleshooting

Common Mistakes

Overcooking

If you microwave it until the centre is completely dry, the texture will become rubbery. Always pull it out while the centre looks slightly underdone.

Cold Ingredients

Using cold cream cheese will result in a lumpy batter. Ensure all ingredients are at room temperature for a smooth finish.

Make It Your Own

Variations

Strict Keto

Ensure your sweetener is 100% allulose or monk fruit with no maltodextrin fillers.

Flexible

You can swap strawberries for raspberries or blackberries if you prefer a different berry profile.

By the Numbers

Nutritional Values

Please use the following nutritional values only as a general guideline. It is highly recommended that you calculate your own values based on the specific products in your pantry. Nutrient density and carbohydrate counts vary significantly between brands. Furthermore, even the exact same brand can have different labels in the United States versus Canada due to differing regulations from the FDA and Health Canada. Please note that these estimated values cover the mugcake base only and do not include any additional strawberry toppings or garnishes you may choose to add.

Storage

Setting Expectations

Practice Batch Philosophy

This recipe isn’t about rigid precision — it’s about learning to read your batter. The same applies to your microwave. Every machine has a different true wattage. Use your first batch to “calibrate” your eyes to the perfect jiggle.
