Bringing Your Sinless Sourdough Dehydrated Starter To Life For Discard Recipes
Bringing Your Sinless Sourdough Dehydrated Starter To Life
For Discard Diva Recipes
This starter guide is for Discard Diva recipes – low-carb, high-protein recipes based on the cottage cheese vital recipe, using a living starter fed with almond flour and coconut flour.
Understanding Your Low Carb Starter
- Different Behaviour: Your Sinless Sourdough starter acts differently from traditional wheat starters. It stays thicker and develops both large and small gas bubbles. The coconut flour makes it look grainy after about 12 hours—just add water during feeding to bring it back to pancake batter consistency.
- Growth Pattern: After several feedings, your starter will become stronger and may grow more quickly.
- Aroma: A healthy starter will develop a fresh, tangy smell.
Important Guidelines
- Stay Consistent: Use the same two low-carb ingredients (almond flour and coconut flour) throughout your starter’s life.
- Recipe Compatibility: For best results, use your starter in recipes that contain the same low-carb ingredients.
Timeline and Basic Steps
Allow 5-6 days for your starter to fully activate before baking.
- Combine your starter packet with 1 tablespoon of coconut flour and 1 tablespoon of almond flour
- Add spring water (pH 7) and mix until you reach pancake-batter consistency
- Cover the jar loosely and place in a warm spot in your kitchen
- Feed your starter every 12 hours for 5-6 days
- When your starter rises to the top of the jar, it’s ready for baking!
Equipment Needed
- 1 (500mL) mason jar with lid
- 1 chopstick or spatula for mixing
Feeding Your Starter
Every 12 hours, feed your starter with:
- 1 tablespoon coconut flour
- 1 tablespoon almond flour
- 4 to 8 tablespoons spring water (as needed to maintain consistency)
How to Know Your Starter is Ready
Your starter is ready to use when it:
- Reaches the top of the jar
- Shows large air pockets (signs of healthy fermentation)
- Has a fresh, tangy aroma
Troubleshooting Tips
Your almond and coconut flour starter will change between two states:
- Grainy texture: Time for a feeding
- Smooth, pancake-batter consistency: Normal after being freshly fed
This starter is perfect for creating delicious low-carb, high-protein sourdough discard recipes including biscuits, bagels, scones, and mini shortcakes.
