What Are Some Tips For Working With Low Carb Sourdough Discard?

Here are a few tips to keep in mind:

At Sinless Sourdough, however, we don’t discard the starter in the traditional sense. In our method, the “discard” is actually the living starter. We never throw away the starter because it’s used in all of our bread and baked good recipes, which require half to one cup of living starter depending on the recipe.  So, technically speaking, there’s no discard. However, in the context of our low carb sourdough discard baking, the “discard” is simply the starter.

For the low carb sourdough discard pizza recipe, you’ll remove about half a cup of starter from your 16-ounce (500 mL) jar. Afterward, feed your starter with the low carb ingredients and spring water to build it back up for future use.

Tips for the Best Results:

  • Feed Your Starter the Night Before: For optimal health, feed your Sinless Sourdough starter the night before you plan to bake. This gives it enough time to ferment and become bubbly, which is key to a healthy dough. You’ll want your starter to be actively rising and almost bursting out of the jar before you use it.
  • Mix Before Measuring: Once your starter is bubbly and ready, use a chopstick or starter spatula to gently mix it to evenly distribute the air pockets, and then measure out the required 1/2 cup for your recipe.
  • Blending the Starter: If you’re using the low carb sourdough discard (or starter) in any recipe other than traditional bread, such as pizza or pancakes, it’s a good idea to blend the discard in a small mixer. This helps achieve a smooth, pancake-like consistency, which works better in these types of recipes.
  • Consider the Moisture: Since sourdough starter is wet, take that moisture into account when creating any low-carb sourdough discard recipe. If you’re using the starter in a recipe like pizza dough, make sure to adjust the flour or other dry ingredients as necessary to balance the hydration levels.

Low-Carb Sourdough Pizza Crust with 24-Hour Preferment

Makes 1 (14-inch) pizza, 8 slices

Equipment Needed:

  • Non-stick pan OR pizza pan or pizza stone with parchment paper

Ingredients:

Preferment (night before):

  • ½ cup Sinless Sourdough living starter*

  • 1 cup almond flour

  • 2 tbsp coconut flour
  • ¼ cup water (adjust for batter-like consistency)

Crust (day of baking):

  • Preferment from above

  • 1½ cups shredded hard cheese (Parmigiano or Asiago)

  • 1 teaspoon xanthan gum

Toppings:

  • 1½ cups low-carb pizza sauce (or as desired)

  • Low carb toppings of your choice

  • 1 cup partly skimmed mozzarella cheese

Preparation Instructions:

Step 1: Prepare the Preferment (Night Before)

  1. In a bowl, mix ½ cup Sinless Sourdough living starter, 1 cup almond flour, and about 2 tbsp spring water.   

  2. Stir to a smooth, batter-like consistency.

  3. Cover loosely and let ferment at room temperature for 24 hours. This develops flavour, improves digestibility, and softens the almond flour.


Step 2: Prepare the Crust (Day of Baking)

  1. Preheat your oven to 400°F (200°C).

  2. In a mixing bowl, combine the 24-hour preferment, 1½ cups shredded hard cheese, and 1 teaspoon xanthan gum. Mix well until fully incorporated into a dough ball.

  3. Prepare your pan by lining a 14-inch pizza pan with parchment paper or use a non-stick oven-proof sauté pan.

  4. Place the dough ball in the centre of the pan.

  5. Using slightly wet fingers and palms, gently press the dough outward until it reaches the edges forming a thin, even crust with no holes or gaps.


Step 3: Bake the Crust

  1. Place the pan on the bottom oven rack and bake for 20-25 minutes, until the crust is golden brown.

  2. Remove carefully, flip the crust so the golden side is up, and bake again until the second side is golden brown and crisp.

  3. Remove from oven and let cool completely on a wire rack — this resting period firms up the crust for that perfect crunch.


Step 4: Add Toppings and Final Bake

  1. Spread low-carb pizza sauce evenly over the crust.

  2. Add your favorite toppings.

  3. Sprinkle 1 cup partly skimmed mozzarella cheese on top for extra crunch and flavor.

  4. Return pizza to oven and bake for an additional 10 minutes until heated through and cheese is melted and bubbling.
