What You’ll Need

Ingredients (Makes 6 Cups)

Equipment: standard 6-cup muffin tin with 6 paper liners

Yogurt Base

  • 1 cup (240 mL) full-fat Greek yogurt
  • 4 tablespoons (60 mL) chunky natural peanut butter (100% peanuts)
  • 2 tablespoons (30 mL) powdered monk fruit sweetener
  • 1 teaspoon (10 mL) banana extract (or vanilla, caramel, butter)

Topping

  • ½ cup (120 mL) sugar-free chocolate chips, melted + 1 tsp coconut oil
  • Handful of crushed salted peanuts

Let’s Freeze

Directions

Yogurt Base

  1. Line a standard muffin tin with 6 paper liners
  2. In a mixing bowl, combine the Greek yogurt, chunky peanut butter, powdered monk fruit sweetener, vanilla extract, and banana extract
  3. Mix until well combined and smooth
  4. Spoon the mixture evenly into the 6 lined muffin cups

Freeze: Place the muffin tin in the freezer for 2 to 3 hours, until the cups are fully set.

Chocolate Topping

  1. Remove the muffin tin from the freezer
  2. Top each frozen cup with the melted sugar-free chocolate
  3. Sprinkle crushed salted peanuts over the chocolate while it’s still soft

Finish

Return the tin to the freezer until the chocolate is fully set.

Once set, pop the cups out of their liners and store them in the freezer. Grab one at a time as needed, and let it defrost for 10 to 15 minutes at room temperature before serving.


No Microwave?

Melting Chocolate on the Stovetop

No microwave? Melt the sugar-free chocolate chips in a heatproof bowl set over a pot of barely simmering water, stirring until smooth. Keep the heat low — sugar-free chocolate can seize just as easily on the stovetop as it can in the microwave.

Common Mistakes

Using Runny Peanut Butter

Natural peanut butter that has separated and gone very oily will make the base too loose to set firmly. Stir it well first, and use the thicker portion from the bottom of the jar.

Topping Before Fully Frozen

If the base isn’t completely set, melted chocolate will sink into the yogurt instead of sitting on top as a clean shell. Freeze for the full 2 to 3 hours before adding the topping.

Overheating the Chocolate

Sugar-free chocolate chips can seize if microwaved too long. Melt in short 15 to 20 second bursts, stirring after each, until just smooth.

Skipping the Defrost Time

Eating these straight from the freezer makes them rock-hard. Let each cup sit for 10 to 15 minutes at room temperature for the best creamy texture.

Don’t Have Everything On Hand?

No Peanut Butter?

  7. Melt in microwave in 30 second intervals stirring between each interval until completely smooth — do not overheat or chocolate will burn

  9. Sprinkle crushed peanuts on top
  10. Return to freezer until chocolate sets completely
  11. Defrost 10-15 minutes before serving
  12. Store in freezer
