You can use a scoring tool, but I’ve found success with a paring knife for the MasterClass™ loaves. A sharp paring knife can score deep enough — about ¼ inch — without tearing the dough. That said, it’s a personal choice.

Different Doughs Need Different Approaches

The Fiber Flora™ series of breads and baked goods produce a stiffer dough that allows you to score lovely designs before baking. In contrast, the Lifestyle Lina™ doughs are more delicate and prone to deflation (degassing), so scoring should be kept simple and minimal with these varieties.

Traditional scoring tools like lames are designed specifically for wheat-based doughs with strong gluten networks. These doughs have:

The curved razor blade of a lame can catch and drag in flexible keto dough. The blade’s width can be too substantial for the delicate structure, and the scoring angle that works for wheat bread often tears this dough instead.

This is why a thin, sharp curved paring knife works better — it slices through the dough with minimal disruption, preserving the structure needed for proper rising during baking.

Choosing Between a Paring Knife and a Scoring Tool

While a paring/peeling knife can produce cleaner results, you may feel more comfortable using an actual sourdough scoring tool. I use both, but only use the scoring tool after the dough has cold proofed for an hour. Using this tool does add to an authentic sourdough baking experience.

  • The extremely thin, sharp razor blade allows for very fine and accurate cuts
  • The rigid blade provides more control compared to the flexible curved blade of a paring knife
  • Razor blades can make shallower, more precise scores without cutting too deeply

Perforated Baguette Tray

Although designed for oven use, the perforated tray proves to be an excellent tool for proofing baguettes. When I first embarked on my journey to create Sinless Sourdough™, I bought this tray with the intention of baking the Sinless™ baguettes in the oven, utilizing steam in a lower tray — similar to traditional sourdough methods. Unfortunately, my initial attempts did not yield the desired results.

Repurposing for Better Results

After acquiring a dedicated baguette baker, I decided to repurpose the perforated tray for the bulk proofing stage. My tray originally featured four cavities, but I asked my handyman to remove one so it would accommodate three baguettes, matching the capacity of my baker. While it wasn’t necessary to modify the tray, I wanted it to align perfectly with my baking setup.

How It Works for Sinless Sourdough™

The perforated tray functions like a banneton, providing essential support during bulk proofing and helping the baguettes maintain their shape before they enter the oven. The one I’m suggesting here has 3 cavities, which perfectly matches most baguette bakers, including the Emile Henry.
