Before You Shop
Use What You Have
You don’t need to buy everything on this list. Use what’s already in your kitchen. A glass container with a lid works well for preferment, and you might already have 16-ounce jars for ingredients.
Check out local thrift shops for bargains. It’s better to spend money on good ingredients rather than too many tools.

Stand Mixer
A stand mixer gives better consistency and texture than hand-kneading. It saves time and lets you focus on perfecting your recipe. Look for one with a dough hook attachment and at least 4.5-quart capacity. The consistent mixing action helps develop the proper structure in flexible keto doughs, which can be more challenging to work with than traditional wheat-based doughs.
Proofing Bowl or Banneton
This is crucial for shaping your dough and helping it rise properly. Choose one that matches your Dutch oven’s diameter for a smooth transfer. Bannetons create those beautiful spiral patterns on your bread’s surface while supporting the dough during its final rise. If you’re new to baking, start with an 8 or 9-inch round banneton lined with a cloth.
Parchment Paper
Parchment paper prevents sticking, ensures even baking, makes cleanup easier, withstands high heat, and helps maintain your bread’s appearance. It’s especially important for flexible keto breads, which can be more delicate than traditional loaves. Keep a roll on hand for lining your Dutch oven or baking sheets. Look for unbleached parchment that can handle temperatures up to 450°F.
Dutch Oven
A heavy Dutch oven creates steam that gives your bread a crispy crust and moist interior. The enclosed environment traps moisture from the dough, mimicking professional steam-injected ovens. A 5 to 7-quart cast iron or enameled Dutch oven works best. Make sure it’s oven-safe to at least 450°F and has a lid that can withstand high heat.
Silicone Molds
Versatile silicone molds are perfect for baking a variety of flexible keto items including breads, scones, muffins, and hamburger buns. They’re non-stick, easy to clean, and help maintain consistent shapes. Look for food-grade silicone that can handle temperatures up to 450°F. Hamburger bun molds are particularly useful for creating uniform portions, while muffin molds help with portion control and even baking.
Large Non-Stick Baking Sheet
A large non-stick baking sheet is essential for baking multiple items at once, from flatbreads to rolls. It provides even heat distribution and makes cleanup a breeze. Choose a heavy-duty sheet (at least 18 x 13 inches) with a rim to prevent items from sliding off. A good baking sheet will last for years and handle the high temperatures needed for achieving a golden crust on your flexible keto baked goods.
