Psyllium husk doesn’t have a specific historical narrative like heritage grains. It’s derived from the seeds of the Plantago Ovata plant, which has been used in traditional medicine for centuries, particularly in India.

Nutritional Profile:

Psyllium husk offers a unique nutritional profile:

• Extremely high in soluble fiber (up to 70% by weight)
• Very low in calories and digestible carbohydrates
• Contains no fat or protein
• Rich in arabinoxylan, a type of hemicellulose (complex carboydrate)

Carb Count:

Sinless Sourdough’s use of psyllium husks in their bread recipe is a clever way to enhance the nutritional profile and texture of their product while keeping it low in net carbs.

Here’s how the information relates to their bread:

Psyllium husks, derived from the Plantago ovata plant, are primarily composed of soluble fiber. This fiber acts as a binding agent in gluten-free baking, providing structure and elasticity to the bread dough. In Sinless Sourdough’s recipe, psyllium husks contributes to the bread’s pliable texture and help maintain moisture, resulting in a softer, less crumbly loaf compared to typical gluten-free breads.

The bread recipe uses 3 tablespoons of psyllium husks per loaf. Based on the nutritional information provided, each tablespoon of psyllium husks contains approximately 15g of total carbohydrates, with 14g being fiber. This means that the 3 tablespoons used in the entire loaf contribute about 45g of total carbohydrates, of which 42g is fiber. The net carb contribution from the psyllium husks alone is only 3g for the whole loaf.

When the loaf is divided into 14 slices, each slice would contain about 3g of fiber just from the psyllium husks. This is a significant amount, considering that the daily recommended fiber intake for adults is 25-30g. The high fiber content not only aids in digestion but may also have potential benefits for heart health by helping to lower cholesterol levels.

It’s worth noting that while psyllium husks are available in both whole and powdered forms, Sinless Sourdough uses the whole form. If you were to switch to the powdered form, you would need to adjust the amount used, as powdered psyllium husk is more concentrated and absorbs water more quickly.

Tips for Adjusting Liquid Content For Substitutes:

  • Start with Less Liquid: Begin by reducing the liquid as suggested, and then add more gradually until you reach the desired dough consistency.
  • Monitor Texture: The dough should be pliable and not too sticky. If it feels dry, add more liquid, one teaspoon at a time.
