Fibre Flora recipes can begin with any of the Sinless Sourdough low-carb dehydrated starters. For these recipes, you bring the starter to life with oat fibre and vital wheat gluten. Once you’ve started your starter with this low-carb ingredient combination, you must continue with it. You cannot switch to feeding it other ingredients.

Exploring Lifestyle Lina and Discard Diva

The Lifestyle Lina and Discard Diva recipes use a living starter made with almond flour and coconut flour. The same rule applies here too. Once you feed your starter this ingredient combination, you cannot change it.

I have a special connection to this starter as it’s the first one I changed into a low-carb heirloom. During the mid-1800s (1875) San Francisco Gold Rush, miners carried sourdough starters to make bread in the harsh wilderness. The area’s unique climate created Lactobacillus sanfranciscensis, which gives San Francisco sourdough its distinct tang. Miners even slept with their starters to keep them warm through freezing nights, earning them the nickname “sourdoughs.” Some strains go back over 150+ years.

This incredible Giza sourdough starter is believed to date back to the time of the pyramids and was rediscovered in 1991 by a renowned doctor with both an M.D. and Ph.D. After archaeologists unearthed an ancient bakery in Giza, thought to have fed pyramid builders around 4500 B.C., the doctor worked with the excavation team to scrape the walls and recover the dormant sourdough culture. His efforts were documented in the January 1995 issue of National Geographic.

The Russian Sourdough Starter from Palekh, a village located two hundred miles northeast of Moscow, dates back to about 1825. In this remote, agricultural community, the long, harsh winters and limited access to fresh supplies made sourdough an essential method for food preservation.
