Through a deep understanding of the science behind low-carb sourdough fermentation—and after extensive experimentation—I’ve identified the optimal ingredient combinations to nourish your dehydrated starter and bring it to life. My personal favorite combination is oat fiber and vital wheat gluten, which you’ll find featured in the lesson “Bringing Your Starter to Life.” That said, you have the flexibility to choose from various low-carb ingredients based on your budget or preferences. I favor oat fiber and vital wheat gluten because they consistently deliver great results, contributing to the oven spring and texture of breads and baked goods. The goal is for you to experiment and discover the combinations that best suit your taste or are most accessible to you. All the ingredients are available in the Sinless Shop, both in the US and Canada.
