The sourdough discard does double duty here: it adds gentle tang and fermentation depth, and it contributes moisture that keeps almond flour biscuits from turning dry and crumbly — a common problem with grain-free baking.

- ¼ cup (60ml) Sinless Sourdough™ Discard: Adds gentle tang, moisture, and fermentation depth
- ½ cup (56g) Almond Flour: The grain-free base that creates a satisfying, hearty crumb
- ¼ tsp Xanthan Gum OR ¼ to ½ tsp Whole Psyllium Husks: Binds the crumb so it holds together after baking
- 1 tsp Zero Carb Baking Powder: Gives a light, airy rise
- Pinch of salt

The process for wet ingredients is similar to other discard-based recipes, but requires using a silicone mold of choice, such as a muffin, brownie, or bun mold, to maintain the biscuit shape during baking.
Silicone works best, as wheat-free doughs tend to stick to traditional metal pans even when oiled, and silicone is easier to use than parchment paper.

Step-by-Step Instructions
Step 1 — Preheat
Preheat your oven to 375°F (190°C). Lightly grease your silicone mold, even though silicone is naturally non-stick.
Step 2 — Mix the Batter
In a small bowl, whisk the egg and sourdough discard together until smooth. Add the almond flour, xanthan gum (or psyllium husks), baking powder, and salt. Mix until you have a uniform, slightly thick batter.
Step 3 — Fill the Mold
Divide the batter evenly between the cavities of your silicone mold, filling each about ¾ full to leave room for rise.
Step 4 — Bake
Bake for 18–22 minutes, until the tops are golden and a toothpick inserted in the centre comes out clean.
Step 5 — Cool
Let the biscuits cool in the mold for 5–10 minutes before gently popping them out. This resting time lets the crumb finish setting so they don’t fall apart when removed.

Check your baking powder is fresh, and avoid overmixing once the almond flour goes in.

Ingredients
Wet Ingredients
- 1 cup (226 g) 4% fat cottage cheese
- 2 eggs
- 2 teaspoons (10 ml) apple cider vinegar (optional)
- ½ cup (120 ml) Biome Boss Living Starter
Dry Ingredients
- 2 cups (192 g) fine grind or sifted almond flour
- 3 tablespoons (27 g) whole psyllium husks (+ 1 tablespoon more if needed)
- 1 teaspoon (6 g) salt
- 2 teaspoons or 1 tablespoon (8-12 g) baking powder (add more when adding heavy ingredients)
Topping
- 1 egg (for egg wash)
- Olive oil or avocado spray (optional)
Note: Metric conversions are approximate. For almond flour, weights can vary by brand due to different densities. Psyllium husk powder is particularly light and fluffy, so weight measurements are more accurate than volume.
Instructions
- Preheat your oven to 375°F (180°C) and line a baking sheet with parchment paper.
- In a mini mixer or blender combine the cottage cheese, eggs and apple cider vinegar.
- Transfer to a large mixing bowl.
- To the mixing bowl add ½ cup Sinless Sourdough living starter.
- Your Sinless living starter (specifically the coconut & almond flour blend) will be dry and crumbly. That’s perfect. Do not add water.
- Add almond flour, psyllium, salt and baking powder. Mix into a moist dough.
- If the dough is too wet add one tbsp at a time of psyllium.
- If the dough is too dry add 1 tbsp at a time of milk (cow’s, almond, coconut)
- Shape moist dough into a ball, pulling in all pieces.
- Cover the bowl with a clean dish towel.
- Refrigerate, letting the dough stiffen for 30 to 60 minutes.
- The dough will now be firmer and will hold together when molded.
- Divide the dough into 6 equal portions.
- Roll each portion into a ball.
- Slightly flatten each ball into a mini hockey-puck shape and set on parchment.
- Whisk the egg. Brush egg wash on top of each biscuit.
- Spray the tops of the biscuits with oil spray to seal toppings into dough (optional)
- Bake for 25 to 30 minutes or until golden.
- Remove from oven and immediately transfer to a cooling rack.
- Enjoy!
