Sinless Sourdough™ is a living fermentation system. Your starter changes daily depending on hydration, environment, temperature, feeding cycle, and ingredient brand. Because of this, no two bakes are ever identical.

You may use cups. You may use grams. What matters most is hydration and dough behaviour.

Gram measurements listed in Sinless™ recipes are approximate reference points based on commonly available brands. However, ingredient density varies by:

This is especially true for oat fibre, vital wheat gluten, psyllium husks, and active starter. Your starter’s weight will vary from day to day depending on how aerated or dense it is when measured.

  • 1 cup (240g) Biome Boss™ discard (or Global Heritage Collection starter fed with blanched almond flour and coconut flour) — provides sourdough flavour and fermentation support
  • 2 large eggs, room temperature, beaten before adding — strengthen structure and enrich the crumb

Phase 1: Ingredient Loading (7–10 Minutes)

Step 1 — Add Wet Ingredients (Directly to Pan)

  • Pour in warmed spring water (lukewarm, 73–77°F / 23–25°C)
  • Add living keto starter (fed within the last 12–24 hours)
  • Add beaten eggs
  • Add olive oil or avocado oil

Step 2 — Pre-Blend and Hydrate Fibre

In a small bowl, whisk together the oat fibre and whole psyllium husks. Sprinkle this fibre blend evenly over the wet ingredients. Let sit 5 minutes to allow partial hydration — this improves gas retention and reduces collapse risk.

Step 3 — Add Remaining Dry Ingredients (In Order)

  • Sprinkle vital wheat gluten evenly over the hydrated fibre layer
  • Sprinkle salt around the outer edges of the pan (avoid yeast contact)
  • Sprinkle sugar evenly over the gluten layer
  • Add baking powder to one side of the pan
  • Create a shallow well in the centre of the dry mixture and add SAF instant yeast last

Important: Do NOT bloom the yeast. Bread machines activate yeast during the mixing cycle. Keep yeast away from direct contact with liquids and salt until mixing begins.

Phase 2: Machine Programming (2 Minutes)

Recommended: White / Basic Bread Cycle

Best for: balanced rise, controlled proof, stable crumb, reduced collapse risk. This formula behaves like an enriched dough due to eggs, fibre, and starter.

Optional (use with caution): French Cycle — longer proof can sometimes over-expand fibre-based dough.

Set loaf size to 2 lb, crust to Medium. Press START. Set a timer for 10–15 minutes.

Phase 3: Critical Dough Check (2 Minutes)

At 10–15 minutes into mixing, open the lid. The dough should be soft, elastic, slightly tacky, and forming one cohesive mass — not stiff, not batter-like.

Adjust if needed: Too dry → add warm water, 1 tablespoon at a time. Too wet → add vital wheat gluten, 1 tablespoon at a time. Close lid immediately and allow cycle to continue. This is the most important step for preventing dense or gummy texture.

Phase 4: Hands-Off Baking (3–4 Hours)

Once the baking portion of the cycle begins, do NOT open the lid. Opening the lid during baking can interrupt oven spring and affect the final crumb structure.

When the bread machine cycle finishes:

  • Step 1: Open the lid immediately as soon as the cycle ends
  • Step 2: Insert a probe thermometer into the centre of the loaf while it’s still in the pan; it must reach 205–210°F (96–99°C)
  • Step 3: If below 205°F, close the lid and run an additional 10–15 minute manual Bake cycle
  • Step 4: Recheck the temperature; repeat the short manual Bake cycle if needed
  • Step 5: Once the correct temperature is reached, remove the bread pan from the machine immediately
  • Step 6: Allow the loaf to rest in the pan on the counter for 10–15 minutes only
  • Step 7: Carefully turn the loaf out of the pan
  • Step 8: Transfer to a wire cooling rack

Final Cooling (Non-Negotiable)

Allow the bread to cool on the rack for a minimum of 2 hours before slicing. Do not leave the loaf inside the closed bread machine for 30 minutes — trapped steam can soften the crust and affect the final structure. Proper cooling allows the gluten to fully set, the psyllium gel to stabilize, moisture to redistribute evenly, and clean sandwich slices. Slicing warm bread traps steam and can create a gummy crumb. Patience produces structure.


Troubleshooting

Common Mistakes

Problem: Dense, heavy loaf that didn’t rise

Try this: Make sure your starter was active and fed within the last 24 hours. Reduce yeast slightly if you’re using a very warm machine. Use the French loaf cycle for slower, steadier fermentation.

Why it happens: Sinless dough relies on a balance between gas production and structure. If the starter is sluggish or the yeast activity is mismatched to your machine’s heat profile, the dough won’t generate or retain enough gas to rise properly.

Problem: Crumbly texture that falls apart when sliced

Try this: Confirm you used whole psyllium husks — never powder. Allow the loaf to cool completely (at least 1 hour) before slicing.

Why it happens: Whole psyllium husks hydrate and behave more like gluten, creating a flexible internal network. Powdered psyllium adds density instead of structure. Cutting too early interrupts the setting of that network.

Problem: Overly moist or gummy interior

Try this: Reduce water slightly (1–2 tablespoons at a time) on the next bake. Double-check that you used whole psyllium husks, not powder. Let the loaf rest briefly after baking.

Why it happens: Too much hydration or the wrong form of psyllium prevents moisture from being absorbed and redistributed properly during cooling, leaving the crumb gummy.

Problem: Bread rose well, then collapsed

Problem: Top crust too dark

Try this: Select Light crust. Use the French cycle instead of White. Be aware that machine brand and age matter — hotter machines brown faster.

Why it happens: Some machines apply higher top heat than others. This is normal and requires adjustment, not correction.

  2. In a small bowl, whisk together the oat fiber and whole psyllium husks. Sprinkle this mixture evenly over the wet ingredients and let sit 5 minutes to partially hydrate.
  3. Evenly sprinkle the vital wheat gluten over the hydrated fiber layer.
  4. Sprinkle the salt around the outer edges of the pan, keeping it away from the yeast.
  5. Sprinkle the sugar evenly over the gluten layer, then add the baking powder to one side of the pan.
  6. Create a small well in the center of the dry ingredients and add the SAF instant yeast.
  7. Select the White or Basic bread cycle, choose the 2-lb loaf setting, and set the crust to medium. Press Start and set a timer for 10–15 minutes.
  8. After 10–15 minutes of mixing, open the lid and check the dough. It should be soft, elastic, slightly tacky, and forming one cohesive mass.
  9. If the dough is too dry, add warm water 1 tablespoon at a time. If the dough is too wet, add vital wheat gluten 1 tablespoon at a time. Close the lid immediately and allow the cycle to continue.
  10. Once the baking portion of the cycle begins, do not open the lid.
  11. When the cycle finishes, open the lid immediately and check the internal temperature while the loaf is still in the pan. The loaf should reach 205–210°F (96–99°C).
  12. If the internal temperature is below 205°F, close the lid and run an additional 10–15 minute manual Bake cycle.
  13. Check the temperature again. If needed, run another short manual Bake cycle until the loaf reaches 205–210°F.
  14. Remove the bread pan from the machine.
