Keto Peanut Butter Sourdough Cookies

Where We Create, Tweak and Enhance Keto and Low Carb Breads and Baked Goods

🍪 Zero Waste. Classic Criss-Cross. Genuine Comfort Food.

Keto 3 ingredient peanut butter cookies changed everything for me. I used to throw away my sourdough starter discard every week, feeling guilty about the waste. Then I discovered this ridiculously simple recipe that turns that “leftover” into cookies so good, my non-keto friends ask for the recipe.

These keto peanut butter cookies deliver that classic criss-cross look and chewy texture — with the added bonus of naturally fermented sourdough and zero refined flour. At just 3.6–4.3g net carbs per cookie (depending on your peanut butter choice), they’re proof that flexible keto baking doesn’t mean sacrifice.

The keto diet focuses on low-carb, high-fat eating to support stable blood sugar and sustained energy. These cookies fit perfectly into that lifestyle, packing 5.6g protein and just 3.6–4.3g net carbs per cookie.

Perfect for keto dieters, sourdough enthusiasts, gluten-free bakers, and anyone looking to reduce food waste while enjoying guilt-free treats.

The Difference

What Makes These Cookies Different?

Traditional peanut butter cookies rely on refined flour, white sugar, and eggs to hold together. They spike your blood sugar and leave you hungry an hour later. Most flexible keto cookie recipes try to replicate that texture with almond flour and multiple egg additions — but they end up cakey, dry, or overly dense.

These cookies take a completely different approach. The living sourdough starter acts as both a binder and flavour enhancer, creating moisture and tang without any eggs. The chunky peanut butter provides natural fat and protein structure. And xanthan gum — just half a teaspoon — creates that signature chewy texture you remember from childhood.

The result? Cookies that taste authentically classic with a subtle sourdough complexity. They’re soft when warm, perfectly chewy when cooled, and genuinely satisfying.

Key Differentiators

  • Natural binding from fermented starter instead of eggs
  • Authentic texture without almond flour heaviness
  • Fermentation benefits from living sourdough culture
  • Zero waste solution for sourdough maintenance

The Starter’s Role

What Adding Biome Boss™ Starter Provides

Available at sinlesssourdough.com/shop/

Adding Biome Boss™ living sourdough starter contributes more than flavour alone. Even in baked goods that don’t rely on sourdough for rise, the starter plays several functional and sensory roles.

Flavour Balance

Fermentation naturally produces mild organic acids. These acids add a gentle tang that balances sweetness, especially in recipes that use chocolate or non-glycemic sweeteners. This helps prevent flavours from tasting flat or overly sweet.

Depth and Complexity

Fermented ingredients introduce layered flavours that develop during fermentation. Instead of a single dominant taste, the final baked good has more nuance and a fuller flavour profile.

Improved Texture

The hydration and fermentation by-products in a living starter can help soften crumb and improve mouthfeel. This is especially useful in flexible keto baking, where textures can otherwise be dry or dense.

Fermentation By-Products

While baking reduces live microorganisms, fermentation creates compounds that remain after baking. These by-products contribute to flavour development and may support easier digestion for some people.

Digestive Support (Indirect)

Enzymatic activity during fermentation begins breaking down certain proteins and carbohydrates. This pre-processing may make baked goods feel lighter or easier to digest compared to non-fermented versions.

Natural Freshness Support

The mild acidity from fermentation creates an environment that is less favourable to spoilage organisms. This can help baked goods stay fresh longer without added preservatives.

Practical Use of Starter

Using starter in recipes makes regular feeding part of everyday cooking. This keeps the culture healthy while reducing waste and adding value to simple recipes.

The Science

Why Does This Recipe Work?

  • High Protein: 5.6g per cookie from natural peanut butter
  • Ultra Low Net Carbs: Only 3.6–4.3g per serving
  • Simple Ingredient List: Just peanut butter, sweetener, starter, and xanthan gum
  • Sourdough Magic: Living starter adds moisture, tang, and fermentation benefits
  • Freezer-Friendly: Freeze unbaked dough balls for up to 3 months
  • No Special Equipment: Mix by hand, bake on a regular sheet pan
  • Blood Sugar Stable: Non-glycemic sweetener won’t spike glucose levels

Why It’s Valuable

Qualities of the Main Ingredients

Chunky Peanut Butter

  • High-Quality Protein: Delivers amino acids that may support muscle maintenance and satiety lasting 3–4 hours between meals
  • Heart-Healthy Fats: Rich in monounsaturated fats that may support cardiovascular health and stable energy levels
  • Micronutrient Dense: Provides magnesium, vitamin E, and B vitamins involved in metabolic function and cellular health

Living Sourdough Starter

  • Prebiotic Compounds: Fermentation creates compounds that may support gut microbiome diversity and digestive comfort
  • Enhanced Bioavailability: Fermentation may reduce phytic acid, potentially improving mineral absorption from other ingredients
  • Natural Leavening: Provides structure and moisture without eggs, making these naturally accessible for egg-free diets

Brown Sugar-Style Keto Sweetener

  • Zero Glycemic Impact: Non-metabolized sweeteners don’t raise blood sugar, supporting stable energy and reduced cravings
  • Familiar Flavour: Mimics brown sugar’s molasses notes without the 12g carbs per tablespoon found in regular sugar
  • Baking Stability: Maintains structure during heating without crystallizing or burning like some alternative sweeteners

Why this combination works: the high-fat peanut butter slows digestion, the protein sustains satiety, and the sourdough starter adds functional compounds that may support gut health. Together, they create cookies that satisfy cravings without the blood sugar roller coaster of traditional recipes.

What You’ll Need

Ingredients

Wet Ingredients

  • 1½ cups chunky peanut butter — natural or no-stir varieties work best; chunky adds texture but smooth works too
  • ⅓ cup Biome Boss™ living sourdough starter — active, bubbly starter at peak fermentation for best binding

Dry Ingredients

  • ½ cup brown sugar-style keto sweetener — choose erythritol-monk fruit blends or allulose for authentic taste
  • ½ tsp xanthan gum — critical functional binder that creates chewy texture without eggs

Can You Substitute Ingredients?

  • Sweetener alternatives: Yes — use golden monk fruit, allulose, or erythritol-based blends; avoid pure stevia (too bitter)
  • Peanut butter options: Yes — smooth peanut butter works but reduces textural interest; almond butter creates a different flavour (still delicious)
  • Sourdough starter: No direct substitute — the living culture provides unique binding and flavour; discard works as well as active starter
  • Xanthan gum: No — critical for texture; guar gum can work in equal amounts but may be slightly gummier

What You’ll Need

Equipment

  • Medium mixing bowl — for combining dough by hand
  • Sturdy spoon or silicone spatula — to mix thick peanut butter dough
  • Measuring cups and spoons — for accurate ingredient ratios
  • Baking sheet — standard half-sheet pan works perfectly
  • Parchment paper — prevents sticking and ensures easy cleanup
  • Fork — for creating the classic criss-cross pattern
  • Small bowl of water — to dip fork and prevent sticking
  • Wire cooling rack — allows airflow for proper cookie firming
  • Refrigerator space — 30-minute chill time essential for texture

Let’s Bake

How Do You Make Perfect Peanut Butter Sourdough Cookies?

Phase 1: Dough Preparation (5 minutes)

  • Combine 1½ cups chunky peanut butter and ½ cup keto sweetener in a medium bowl, stirring vigorously for 1–2 minutes until thick and cohesive
  • Add ⅓ cup sourdough starter and mix thoroughly until no streaks remain — dough will loosen slightly
  • Sprinkle ½ tsp xanthan gum evenly over the surface and mix firmly for 45–60 seconds until fully incorporated

Pro tip: The xanthan gum needs time to hydrate — don’t skip the refrigeration step or cookies will spread too much.

Phase 2: Chilling (30 minutes)

  • Cover bowl with plastic wrap or a clean kitchen towel and refrigerate for exactly 30 minutes
  • This chilling time allows the xanthan gum to hydrate and the dough to firm for easier shaping

Common mistake: Skipping or shortening the chill time leads to flat, overly spread cookies.

Phase 3: Shaping and Prep (10 minutes)

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper
  • Scoop dough and roll into 14 golf ball-sized portions using your hands — dough should be firm but pliable
  • Place dough balls 2 inches apart on the prepared baking sheet
  • Dip a fork in water, then press each ball firmly at two angles to create the classic criss-cross pattern

This is the game-changer: wetting the fork between each press prevents sticking and creates clean lines.

Phase 4: Baking and Cooling (1 hour 30 minutes)

  • Bake for 12–15 minutes until edges are lightly golden and centres appear set but still slightly soft
  • Remove from oven and let cookies rest on the baking sheet for 5 minutes — they’ll firm as they cool
  • Transfer to a wire rack to cool completely at room temperature
  • Once cooled, refrigerate cookies for at least 1 hour before enjoying for best texture

Pay close attention to this next part: cookies will seem underbaked when hot but will firm perfectly as they cool. The refrigeration step is crucial — it allows the texture to set properly and enhances the flavour. Overbaking creates dry, crumbly cookies.

Troubleshooting

Common Mistakes

Problem: Cookies spread too thin and turn crispy

Solution: Ensure the full 30-minute refrigeration time and measure xanthan gum accurately. Use natural peanut butter with at least 90% peanuts — too much added oil causes spreading.

Why it happens: Insufficient xanthan gum hydration or too much fat in the peanut butter.

Problem: Dough is too crumbly and won’t hold together

Solution: Mix xanthan gum more thoroughly for at least 45 seconds. Ensure sourdough starter is well-incorporated with no dry pockets.

Why it happens: Xanthan gum wasn’t evenly distributed or starter wasn’t mixed completely.

Problem: Cookies taste too tangy or sour

Solution: Use fresher starter or reduce starter to ¼ cup and add 1 tablespoon water.

Why it happens: Overfermented starter has higher acidity that dominates flavour.

Problem: Cookies are too soft even after cooling

Solution: Ensure cookies have been refrigerated for at least 1 hour after cooling on the wire rack. If still soft, bake an additional 2–3 minutes next batch.

Why it happens: Insufficient chilling time or underbaking — the cold temperature helps cookies achieve proper firm-yet-chewy texture.

Problem: Fork pattern sticks and tears the dough

Solution: Dip fork in water between each press and work gently.

Why it happens: Dry fork grabs sticky peanut butter dough.

Make It Your Own

Variations

Chocolate Chip Delight

Add ½ cup sugar-free chocolate chips to the dough after mixing in xanthan gum; press gently into the surface before baking. Creates indulgent peanut butter cup vibes — pairs beautifully with unsweetened almond milk.

Cinnamon Spice

Mix 1 tsp cinnamon and ¼ tsp nutmeg into the dough with the xanthan gum; roll dough balls in a cinnamon-sweetener blend before pressing. Warm, cozy flavour — serve with sugar-free chai tea.

Almond Butter Twist

Replace peanut butter with an equal amount of almond butter for a milder, slightly sweeter taste. May need an extra 1–2 minutes baking time due to different moisture content — excellent with fresh berries.

Sea Salt Caramel

Sprinkle flaky sea salt on tops immediately after removing from oven; drizzle with sugar-free caramel sauce once cooled. Sweet-salty contrast — perfect for special occasions.

Double Peanut Crunch

Fold in ⅓ cup chopped roasted peanuts after adding xanthan gum; roll dough balls in crushed peanuts before pressing for visual appeal. Great for peanut butter lovers.

Coconut Tropical

Add ¼ cup unsweetened shredded coconut to dough; press toasted coconut flakes into tops before baking. A subtle tropical twist — pairs with sugar-free coconut milk.

Keeping It Fresh

How Do You Store These Cookies?

Room Temperature Storage

Store in an airtight container at room temperature for up to 5 days. Place parchment paper between layers to prevent sticking.

Refrigerator Storage

Keep in a sealed container in the refrigerator for up to 2 weeks — texture actually improves over the first 24 hours. These cookies are best enjoyed cold straight from the fridge.

Freezer Storage

Freeze baked cookies in a freezer-safe container for up to 3 months. Flash-freeze on a baking sheet first, then transfer to a container to prevent clumping. Thaw at room temperature for 30 minutes or microwave for 10–15 seconds.

You can also freeze unbaked dough balls on a parchment-lined tray, then transfer to a freezer bag — bake directly from frozen, adding 2–3 minutes to baking time.

Pro Tip: Make a double batch and freeze half the dough balls — you’ll always have fresh cookies ready in under 20 minutes.

Setting Expectations

Why Is Your First Bake a Practice Bake?

Your first attempt with these cookies should be considered a practice bake. Here’s why experimentation matters:

Oven Temperature Variations

Ovens vary by brand, age, and calibration — yours might run 15–25°F hotter or cooler than indicated. Your first bake helps you understand whether you need 12 or 15 minutes.

Ingredient Brand Differences

Different peanut butter brands have varying oil content and salt levels. Some keto sweeteners brown faster than others. Your specific brands might need minor adjustments.

Personal Palate Adjustments

Non-tasters perceive less bitterness and may prefer less sweetener. Medium tasters (most people) will find the recipe balanced as written. Super-tasters detect bitterness intensely and may want an extra tablespoon of sweetener.

Starter Strength Variations

Your sourdough starter’s activity level and hydration ratio affects binding and tang. Adjust starter amount by 1–2 tablespoons based on your dough consistency.

Don’t be discouraged if your first batch isn’t perfect. Take notes, adjust, and bake again. Flexible keto baking is a journey of discovery — and even imperfect cookies are delicious.
