Four Ways to Bake Your Keto Bread

One Practice Loaf

It may take one practice loaf to find the exact baking time that works best for your oven, since results can vary depending on the brand, age, and whether you’re using a convection oven, small countertop convection, or air fryer. Breads made with flax, psyllium, and nut flours naturally bake differently than grain breads — they hold more moisture and can sometimes feel slightly soft or “gummy” in the centre even when fully cooked. This is completely normal for high-fibre, low-carb recipes.

Keep a simple record of your oven temperature, bake time, and results for each loaf until you find your magic combination. Once you do, every loaf will bake beautifully and reliably. If your loaf ever feels a bit too moist inside, simply wrap it in foil and return it to the oven for 15 minutes at 325°F to help it finish setting. Always check for doneness with an internal temperature of 200–205°F.

Method 1: Convection in Regular Oven (Recommended)

Temperature: 325°F convection

Baking Time: 75–80 minutes

Cooling: Turn off oven and let bread rest inside for 20 to 30 minutes before removing

Why it works: The slightly lower temperature and longer bake allow the interior to cook through slowly, preventing the dense or gummy centre that’s common in flax and psyllium breads. The shorter rest time keeps the crust from hardening while the middle finishes setting.

Method 2: Small Convection Oven

Temperature: 325°F

Baking Time: 60–65 minutes

Cooling: Turn off oven and let bread rest inside for 15–20 minutes

Shape note: Form a slightly smaller loaf to fit the pan and ensure even baking

Why it works: Compact convection ovens heat more intensely, so lowering the temperature gives a gentler bake that allows the centre to dry evenly without over-browning the top.

Method 3: Traditional Oven (No Convection)

Score bread: to help prevent cracking and allow steam to escape

Temperature: 340°F

Baking Time: 75–80 minutes

Cooling: Turn off oven and let bread rest inside for 15–20 minutes

Why it works: The slightly higher temperature compensates for reduced air circulation. Scoring releases trapped steam, helping the interior firm up while keeping the crust tender.

Method 4: Ninja Air Fryer or Compact Air Oven

Temperature: 325°F

Shape: form a smaller, flatter loaf to allow hot air to circulate evenly

Check frequently: begin checking at 40 minutes; the top should be golden brown and the loaf should feel firm to the touch

Cooling: cool on a wire rack for 30–45 minutes before slicing

Why it works: Air fryers heat from all sides in a confined space, so a lower temperature prevents the crust from darkening before the centre sets.

Critical Tips for Success

Use freshly ground golden flax for lighter colour, superior nutrition, and no bitterness. Already-ground flax has oxidized and will make your final loaf darker with a bitter taste.

Water ratios matter: if using already-ground golden flax and psyllium, you’ll need 1¾ to 2 cups of hot water. Always start with 1¾ cups.

Don’t add starter to hot dough — wait until cooled, or you’ll kill the beneficial bacteria before it even has a chance to ferment the dough.

Perfect consistency: let the dough rest for 30 minutes. This stiffens the dough so you can shape it and it will hold on the baking sheet. You want the dough to be moist but not too wet, or it will flatten on the baking sheet and deflate once baked — or too dry, as it will crack.

Let it cool completely — hot bread will crumble. Patience creates perfect slices.

Ingredients

Dry Ingredients:

  • 2 cups + 2 tablespoons golden flax seeds (to make 3 cups freshly ground golden flaxseed meal)
  • ¼ cup (40g) freshly ground psyllium husk powder
  • 1 tablespoon (12g) double-acting baking powder (zero carb)
  • 1 teaspoon (6g) Celtic or Himalayan salt

Wet Ingredients:

  • 1¾ to 2 cups (14 ounces) hot water (not warm and not boiling) — start with 1¾ cups
  • 1/2 cup (240g) Biome Boss living starter

Instructions

1. Preheat the Oven

  • For a convection oven, preheat to 325°F (162°C)
  • Line a baking sheet with parchment paper or a silicone mat

2. Prepare and Mix Dry Ingredients

  • Grind golden flax seeds into a fine meal just before baking for best texture and flavour
  • Grind whole psyllium husks into powder
  • In a large bowl, sift together the flaxseed meal, psyllium husk powder, baking powder, and salt

3. Hydrate the Dough

  • Pour the hot water over the dry ingredients and stir quickly until evenly mixed
  • By the time the ingredients are mixed, the dough will be just warm

4. Add Starter and Mix

  • Add the Sinless Sourdough starter to the cooled mixture
  • Using your hand, mix until well incorporated
  • Adjust if needed: add 1 tablespoon of water at a time if dough is too dry

5. Shape and Top

  • Transfer dough to a clean small bowl (about the size of the dough ball).  Rub the ball with ground psyllium.  If using a round banneton, line the kitchen towel with ground psyllium.
  • Let dough rest for 10 minutes.
  • Transfer dough to lined baking sheet, rounded side up.
  • Using warm water on your hand, shape and smooth out the surface of dough, adding more water if needed to remove any cracks
  • Add one last generous layer of water on dough
  • Sprinkle with 1 teaspoon of golden flax seeds

6. Bake

  • Bake for 75 to 80 minutes in convection oven. Turn off the oven. Let it cool for 20 to 30 minutes in the oven.

8. Cool Completely

  • Transfer to a wire rack and allow your keto bread to cool fully before slicing — at least 1 hour.  If the bread is not yet cooked throughout, wrap in foil and put back into the oven for 10 to 15 minutes at 350 F.  You’ll soon discover the right temperatures with your oven for the bread to cook perfectly.
