How to Make Keto Chocolate Shortbread Cookies

Phase 1: Cream the Base

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the softened butter, egg yolks, vanilla extract, and butter extract. Mix with a hand mixer for about 2 minutes until the mixture is light, fluffy, and free of butter chunks. Add the brown sugar sweetener and cream again until smooth.

Phase 2: The Sift and Mix

Sift the almond flour, cocoa powder, and xanthan gum directly into the wet ingredients. This step matters because cocoa powder clumps easily, and sifting helps create a more uniform chocolate dough. Mix on low speed just until the dry ingredients are fully incorporated. The dough will look crumbly, and that is exactly what you want for a proper shortbread texture.

Phase 3: Chill the Dough

Press the crumbly mixture together into a cohesive dough ball. Wrap it tightly and refrigerate for 30 minutes. This chilling step helps firm the butter so the cookies hold their shape while baking.

Remove the chilled dough and divide it into 12 large cookies or 24 smaller cookies.
