I created this keto bread for my dear friend and coach, Sandra. She loves eating gluten-free and has been an amazing supporter — she’s purchased a membership and several of my keto dehydrated sourdough starters. Her enthusiasm inspired me to develop more gluten-free sourdough variations.
While these breads are perfect for those who are gluten-sensitive or gluten-intolerant, they’re not suitable for anyone with celiac disease.
This 3-seed sourdough keto bread made with my living Biome Boss™ starter is absolutely delicious, and I’m excited to share that I’ve now created a cinnamon raisin version too! The recipe calls for ¼ cup of finely chopped raisins, which distributes that delicious sweet raisin flavour throughout the bread. It adds about 2 net carbs per slice, but you can easily omit the raisins for a stricter keto version and simply enjoy a cinnamon 3-seed bread instead.
While it’s perfect all year round, it’s especially magical around Christmas — the warm cinnamon and sweet raisins bring all those cozy holiday feelings without the sugar crash or carb guilt.

- Transfer half to your mixing bowl and set aside
Pro tip: Seeds go from perfect to burnt in seconds — stay at the stove and keep them moving.
Phase 2: Create Seed Flour
- Pour remaining toasted seeds into coffee grinder with baking powder
- Grind to a coarse flour texture — some texture is good, not powder-fine
- Add ground mixture to bowl with whole seeds
- Grind ¼ cup (43g) flax seeds into fine powder and add to bowl
- Stir in remaining ¼ cup (43g) whole flax seeds
- Add healthy salt and mix thoroughly
Common mistake: Over-grinding creates seed butter — pulse in short bursts, checking frequently.
Phase 3: Mix and Hydrate
- Add psyllium husks, cinnamon, brown sugar sweetener, and xanthan gum to seed mixture — stir thoroughly
- Fold in chopped raisins until evenly distributed (skip for lower carbs)
- Fold in living Biome Boss™ starter using gloved hands
- Squeeze mixture together, adding 1 tablespoon (15ml) water at a time until a solid ball forms
- Cover and let rest for 30 minutes — this is critical
This is the game-changer: the rest period lets psyllium fully absorb moisture while sourdough acids begin working on the seed components. This creates proper bread texture and may support easier digestibility.
Phase 4: Bake and Rest
- Preheat oven to 350°F (175°C); line baking tray with parchment
- Transfer dough to parchment and shape into a log or circle
- Using water on your fingers, smooth out the surface to remove any cracks
- Sprinkle raw seeds or walnut pieces on top and press into dough (optional)
- Sprinkle 2 tablespoons (24g) brown sugar sweetener over top for caramelizing (optional)
- Brush dough with avocado oil (optional)
- Bake for 40–45 minutes until light golden and it sounds hollow when tapped
- Cool in pan for 5 minutes, then transfer to a wire rack
