Ingredients

  • 2 large eggs
  • 1 cup protein isolate (240 ml)
  • 1½ cups chunky peanut butter (360 ml)
  • 2 tablespoons avocado oil (30 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • ½ teaspoon baking powder (2.5 ml)

  • Sugar free or no sugar added strawberry jam (for garnish
  • 2 tablespoons Swerve Icing Sugar

Instructions

  1. Mix eggs and protein powder
    In a large bowl, whisk the eggs, then stir in protein powder until smooth and slightly thick.
  2. Add wet ingredients
    Stir in peanut butter, avocado oil, vanilla extract, and salt until creamy.
  3. Add baking powder and sweetener.
    Mix thoroughly to incorporate.
  4. Fold in chocolate and caramel chips
    The dough should be soft and scoopable. Add cream only if needed to bring it together.
  5. Shape cookies
    Scoop 1½ tablespoons (22 ml) per cookie, roll into balls.  Using a measuring tablespoon, press the back of the spoon down into the circle.  Make a cavity.  Using your fingers fix the cookie dough around the cavity so that it’s not cracked.  Repeat process for all the cookies.
  6. Garnish
    Add about 1 heaping teaspoon of sugar free or no sugar added strawberry jam into the middle of the cookie.
  7. Bake
    Bake at 350°F (175°C) for 12 to 15 minutes, until edges are set and light golden but centers are slightly soft.
  8. Cool
    Let cookies sit on the pan for 5 minutes, then transfer to a cooling rack. When cookies  are completely cooled, dust with Swerve icing sugar sweetener.
