Cream the butter and sweetener thoroughly. This creates air pockets that contribute to a lighter texture. Beat for 2-3 minutes until the mixture is fluffy and well combined.
Temperature matters for egg mixing. Add eggs one at a time to the butter mixture, beating well after each addition. This prevents curdling and creates a smooth, emulsified base.
The fibre needs time to hydrate. Let the batter rest for 5 minutes after mixing before pouring into the pan. This allows psyllium and flax to fully absorb liquid, creating better structure.
What NOT to Do:
Don’t use artificial banana flavouring. It tastes like chemicals and may contain additives you’d rather avoid. Real banana extract or imitation banana extract (made from natural compounds) only. There are some available that are

- 3 teaspoons (15 ml) banana extract (not artificial)
- 1 teaspoon (5 ml) vanilla extract
- 1 teaspoon (5 ml) apple cider vinegar
Dry Mix:
- 2 cups (192 g) almond flour
- ½ cup (60 g) golden flaxseed meal, finely ground
- 3 tablespoons (24 g) psyllium husk, finely ground
- ¼ cup (30 g) coconut flour
- 1 tablespoon (15 g) double acting baking powder (zero carb)
- 1 tablespoon (7 g) anti-inflammatory pumpkin pie spice blend (from above)
Optional Add-ins:
- ½ cup (60 g) walnut pieces**
- 1 ripe banana, sliced in half lengthwise for topping (optional)
- ¼ cup (30 g) of whole walnuts for topping (optional)
- 2 tablespoons (25 g) brown sugar sweetener for topping (optional)
*If unavailable, substitute with baked butternut squash. Do NOT use sweetened pumpkin pie filling—it defeats the entire anti-inflammatory purpose.
**Fold into batter and/or sprinkle on top. Pecans also work well.
Instructions
- Prep: Preheat oven to 350°F.
- Line 8.5×4.5″ or 5×9″ silicon loaf mold or bread pan with parchment paper.
- Make spice blend: Whisk together all spice blend ingredients in a small bowl. Set aside (store extra in airtight container).
- In a large bowl, add all wet ingredients. Mix well.
- Add all dry ingredients to the bowl. Mix together.
- Add texture: Fold in walnut pieces (if desired).
- Bake: Pour batter into prepared loaf pan.
- Decorate top of dough with fresh banana, walnuts, and sprinkle with brown sugar sweetener.
- Bake for 30 minutes: Cover bread for 50 minutes until golden and toothpick inserted in centre comes out clean.
- Cool: Let rest 15 minutes in pan, then transfer to cooling rack. Cool completely before slicing for best texture.
