Step-by-Step Instructions

Part 1 — The Mini Loaf

Add all mini loaf ingredients to your mini blender and blend until completely smooth. Pour into a greased 5½” x 5½” microwave-safe glass dish. Microwave uncovered on high for 3 minutes. Allow to cool for one minute in the dish, then transfer to a wire rack and cool completely while you prepare the custard.

Part 2 — The Custard

Add all custard ingredients directly into your square microwave dish — no extra bowl needed. Whisk together until silky smooth. Using a fork, poke holes generously all over the cooled mini loaf on both sides. Cut the loaf lengthwise into 3 fingers. Dredge the fingers in the custard, then set them in the custard and seal with the lid. Refrigerate for at least 15 minutes, or overnight for best results. The longer the soak, the more tender the fingers.

Part 3 — Pan Fry

Melt 1–2 tablespoons of butter in a pan over low-medium heat. Fry the custard-soaked fingers for 2–3 minutes per side until golden brown. Serve immediately with sugar-free maple syrup and whipped cream.


No Microwave?

Air Fryer, Convection Oven, or Toaster Oven

Preheat your air fryer, convection oven, or toaster oven to 375°F (190°C).

Lightly brush or spray all sides of the custard-soaked fingers with melted butter or avocado oil spray. Place them in a single layer in the air fryer basket or on a wire rack set over a small baking sheet — do not overcrowd.

Cook for 5–6 minutes, then carefully flip each finger and cook for another 4–5 minutes, until deeply golden and set on the outside.

Toaster oven note: If your toaster oven doesn’t have a convection setting, add 2–3 minutes to each side and watch closely, as heat distribution is less even.

Remove and rest for 1 minute before cutting into fingers and dipping into the egg custard. Pan fry as per above.

Troubleshooting

Common Mistakes

Using too much baking powder

More than ½ tsp of baking powder in this recipe creates too aggressive a rise, leading to a dry, airy crumb that’s difficult to cut with a fork. Stick to ½ tsp.

Skipping the cream of tartar

While it might seem like a minor ingredient, the cream of tartar makes a meaningful difference to the height and stability of the loaf. Don’t leave it out.

Not cooling the loaf completely before soaking

If the loaf is still warm when it goes into the custard, the egg in the custard will begin to cook prematurely. Let it cool fully on the wire rack.

Not poking enough holes

The holes are what allow the custard to penetrate deep into the crumb. Be generous with the fork on both sides.

Soaking for less than 15 minutes
