A delicious and super easy to make Keto Cookie recipe!  And it’s classic Italian.  I make these Keto biscotti for my husband on a regular basis because he LOVES, LOVES, LOVES the added protein.  Me too!

This recipe is compatible with a keto-flexible approach and the low-carb lifestyle. It is very low in carbohydrates while providing high protein and moderate healthy fats, making it suitable for those following low-carb eating with flexibility beyond traditional ketogenic fat-to-protein ratios

There’s something magical about the ritual of biscotti—the anticipation as they bake twice, the satisfying snap when you bite into one, and that perfect moment when you dip them into your morning coffee. This keto cookie recipe honours that tradition while supporting your modern health goals, proving that you don’t have to choose between authenticity and nutrition.

What sets this apart from other keto cookie recipes? The traditional Italian twice-baking method creates an incredibly crispy texture that standard keto cookies simply can’t match. These authentic biscotti prove that the best keto cookie recipes don’t just mimic traditional treats—they honour their cultural heritage while delivering modern nutritional benefits.

Why This Recipe Works

When searching for keto cookie recipes, most people find American-style soft cookies that don’t satisfy that craving for something truly crispy and authentic. This Italian biscotti recipe stands apart from typical keto cookie recipes because it delivers the traditional twice-baked crispiness and classic almond flavour of Tuscan cantucci, while packing an impressive 13 grams of protein per cookie with just 1.5 net carbs.

What makes biscotti special? Unlike regular cookies, biscotti (meaning “twice-cooked” in Italian) are traditional Italian cookies that originated in Tuscany and date back to Roman times. These hard, crunchy cookies were designed for long journeys and dunking in wine or coffee—making them perfect for modern meal prep and coffee pairings.

The key breakthrough? Using whey protein isolate as a flour replacement creates structure while boosting protein content, and the combination of almond flour with slivered almonds delivers that unmistakable nutty crunch. Among all keto cookie recipes, this one is indistinguishable from traditional biscotti—crispy, satisfying, and perfect for dunking in your morning coffee.

Perfect for: Coffee shop cravings, meal prep snacks, Italian-inspired desserts, and anyone wanting a guilt-free treat that actually delivers on nutrition goals.

Ingredient Science & Behaviour

almond flour for low carb bread in bread machine

The Almond Foundation

Double Almond Power: Almond flour provides the nutty base and healthy fats while keeping carbs minimal, while slivered almonds add the characteristic crunch and visual appeal that makes authentic Italian biscotti so distinctive. This dual almond approach sets this apart from other keto cookie recipes that rely on single nut sources.

Almond Extract Enhancement: While traditional biscotti often rely solely on the nuts for almond flavour, a touch of pure almond extract amplifies that signature taste without adding carbs.

Protein & Structure Elements

Whey Protein Isolate Magic: This is your secret weapon for structure and protein density. Unlike casein or plant proteins, whey isolate binds beautifully in baked goods and creates the firm texture essential for twice-baking. The 1 cup + 1 tablespoon measurement is critical—too much and they’ll be tough, too little and they won’t hold their shape during slicing. This protein boost makes these keto cookie recipes far more nutritious than standard cookies.

Fat & Sweetening Components

Extra Light Olive Oil: Keeps the biscotti from being too dry while staying true to traditional Italian methods. The light flavour won’t compete with the almond notes that should be the star of the show.

Monk Fruit Sweetener: Granulated monk fruit behaves most like sugar in this application, providing sweetness without the crystallization issues you might get with liquid sweeteners. This makes these keto cookie recipes diabetic-friendly and blood sugar stable.

Preparation & Handling Tips

Essential Shaping Techniques

Critical Technique #1: The Log Shape Form your dough into a low, flat log (10 x 4 inches) rather than a tall, narrow one. This ensures even baking and makes slicing much easier. The flatter shape also prevents the centre from staying undercooked while allowing the almonds to distribute evenly throughout. This technique is crucial for successful keto cookie recipes.

Proper Slicing Method

Critical Technique #2: The Slice After the first bake and 15-minute cooling period, use a large, sharp knife and cut straight down—no sawing motions. Sawing will crumble your biscotti and scatter the almonds. If the log seems too soft to slice cleanly, let it cool another 5 minutes.

Temperature and Timing Control

Common Mistake to Avoid: Rushing the cooling process. That 15-minute rest after the first bake isn’t optional—it’s when the proteins set up enough to slice without the almonds falling out or the cookies cracking.

Temperature Matters: Keep your oven at exactly 350°F. Higher temperatures will brown the outside before the centre sets, while lower temperatures won’t create the proper texture contrast between crispy exterior and tender crumb.

Troubleshooting Soft Biscotti: If your finished biscotti aren’t crispy enough, return them to the oven for 3-5 additional minutes. They should sound hollow when tapped and feel completely dry.

Storage & Reheat

Room Temperature: Store finished keto biscotti in an airtight container for up to 2 weeks. The low moisture content and twice-baking process makes them naturally shelf-stable, just like traditional Italian biscotti. This longevity makes these keto cookie recipes perfect for batch cooking.

Crisping Method: If they lose their crispness (unlikely, but possible in humid weather), spread on a baking sheet and warm in a 300°F oven for 3-4 minutes. Let cool completely before storing again.

Professional Tip: Store with a small piece of parchment paper between layers to prevent any potential sticking, especially if you live in a humid climate.

Expert Tips & Troubleshooting

slivered almonds

Perfect Texture Techniques

For Perfect Almond Distribution:

  • Toss slivered almonds with a pinch of almond flour before adding to prevent them from sinking during baking
  • Use sliced almonds instead of slivered for a more rustic, traditional appearance
  • Toast the almonds lightly beforehand for deeper flavour (optional)

Skill Level Adaptations

Beginner Modifications:

  • Start with 3 tablespoons of sweetener and adjust to taste after your first batch
  • If you’re nervous about slicing, chill the log for 10 minutes after the first bake for easier handling
  • Make sure your knife is completely clean between cuts to prevent dragging crumbs

Advanced Techniques:

  • For extra crispiness, turn off the oven after the second bake and let them sit in the residual heat for 10 minutes with the door cracked
  • Brush the log lightly with beaten egg white before the first bake for a more golden appearance
  • Score the log lightly before the first bake to guide your slicing

Common Mistakes to Avoid

What Not to Do:

  • Never skip the first cooling period—you’ll end up with crumbled biscotti
  • Don’t use whole almonds as they’re too large and will make slicing difficult
  • Avoid over-flouring your work surface; the dough should be slightly tacky

Storage, Freezing & Make-Ahead

Short-Term Storage Solutions

Room Temperature: Keep in an airtight container at room temperature for up to 2 weeks. These actually improve slightly with age as they become even crispier. This shelf stability makes these keto cookie recipes perfect for gift-giving and meal prep.

Professional Storage Tip: Traditional Italian bakers store biscotti in tin containers to maintain maximum crispness. The metal helps regulate humidity better than plastic containers.

Long-Term Freezing Options

Freezing Instructions:

  • Unbaked dough: Wrap the shaped log tightly and freeze up to 3 months. Thaw completely before first baking.
  • Baked biscotti: Freeze finished biscotti up to 6 months. Thaw at room temperature—no need to re-crisp.
  • Chocolate-coated: Best eaten fresh, but can be frozen for up to 1 month.

Make-Ahead Strategies

Make-Ahead Strategy: These are perfect for making ahead! Bake up to 1 week in advance and store in airtight containers. They’ll stay perfectly crispy and are ideal for entertaining or gift-giving. Among all keto cookie recipes, these have the longest shelf life.

Flavor Variations & Add-Ons

Classic Italian Variations

  • Anise Biscotti: Replace almond extract with anise extract and add 1 teaspoon anise seeds
  • Orange Almond: Add zest of 1 large orange and replace some almond extract with orange extract
  • Double Almond: Increase slivered almonds to 3/4 cup and add 1 tablespoon almond butter to wet ingredients

Modern Flavour Twists

  • Lemon Poppy: Replace almond extract with lemon extract and add 1 tablespoon poppy seeds
  • Vanilla Bean: Split and scrape 1 vanilla bean into the wet ingredients
  • Espresso Almond: Add 1 tablespoon instant espresso powder to dry ingredients

Optional Coatings & Drizzles

Sugar-free white chocolate drizzle, crushed nuts only (pistachios, hazelnuts), sugar-free caramel sauce, or cinnamon “sugar” dusting using monk fruit and cinnamon.

Nut Substitutions for Keto Cookie Recipes

Hazelnuts for traditional Italian cantuccini, pecans for an American twist, macadamias for rich, buttery flavour, or pine nuts for Mediterranean flair. These substitutions work in most keto cookie recipes but are especially effective in twice-baked cookies.

Ingredients

  • 2 medium eggs
  • 1 teaspoon (5 ml) almond extract
  • ⅓ cup (80 ml) extra light olive oil
  • 1 cup (96 g) almond flour
  • 1 cup + 1 tablespoon (135 g) whey protein isolate
  • ¼ cup (50 g) monk fruit or stevia granular sweetener
  • 1 teaspoon (5 g) baking powder (zero carb)
  • ½ teaspoon (3 g) salt (healthy salt)
  • ½ cup (45 g) slivered almonds

Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper and spray with avocado oil spray.
  2. Mix wet ingredients: In a medium bowl, whisk together eggs, olive oil, and almond extract until smooth. Set aside.
  3. Combine dry ingredients: In a clean glass bowl, add almond flour, protein isolate, sweetener, baking powder, salt, and slivered almonds. Mix well to distribute almonds evenly.
  4. Form dough: Pour the wet ingredients into the dry ingredients and gently fold together until a cohesive dough forms. The almonds should be evenly distributed throughout.
  5. Shape the log: Turn the dough out onto the prepared baking sheet. Form into a low, flat log, about 10 x 4 inches.
  6. First bake: Bake for 12 to 15 minutes, until firm to the touch and light golden brown.
  7. Cool and slice: Remove from oven and let cool for 15 minutes. Using a large sharp knife, gently slice the log into 12 even slices. Cut straight down rather than sawing back and forth.
  8. Second bake: Separate the slices and spread them around the baking sheet with cut sides exposed. Bake another 10 to 15 minutes, turning them over halfway through so both sides become golden and crispy.
  9. Cool completely: Remove from oven and set on wire rack to cool completely before serving or storing.
