  2. Add dry ingredients on top in layers
  3. Use beater attachment and mix until ingredients come together into a shaggy dough
  4. Let sit for 30 minutes covered with a damp towel (this allows psyllium husks to fully hydrate)
  5. Change to J-hook attachment (dough hook)
  6. Knead for about 8 minutes until dough pulls together into a log and becomes smooth
  7. Remove from bowl onto work surface dusted with oat fibre

Pro tip: The 30-minute rest is crucial — it allows the psyllium and oat fibre to absorb liquid fully before kneading.

Phase 2: Incorporate Mediterranean Add-ins with Stretch-and-Fold

Perform ONE stretch-and-fold on oat fibre dusted work surface:

  • Grab one edge of dough, stretch it up, fold over the center
  • Rotate dough 90 degrees and repeat until all four sides are folded (4 folds total)
  1. Flatten the dough into a circle
  2. Add feta cheese to the center. Fold the dough over the feta like folding a box together, covering it completely. Turn over. Shape into a ball again
  3. Flatten the dough again into a circle
  4. Add olives to the center. Fold the dough over to cover the olives like folding a box together. Turn over. Form into a ball again
  5. Flatten the dough once more
  6. Add chopped rosemary to the center. Fold the dough over the rosemary like folding a box together. Turn over
  7. Bring the dough together, constantly patching any cracks in the dough from the ingredients
  8. Do a final stretch for tension on the top surface by pulling the dough edges underneath and creating a smooth, tight top

Common mistake to avoid: Don’t rush the patching process — taking time to seal cracks prevents ingredients from falling out during baking.

Phase 3: Build Tension with Stretch-and-Fold (ONE TIME — CRITICAL)

This is the game-changer for oven spring.

  1. Place dough on work surface
  2. Perform ONE stretch-and-fold to build tension: grab one edge, stretch it up, fold over the center

  2. Invert banneton carefully onto parchment-lined baking sheet
  3. Press whole rosemary leaves gently onto top surface for decoration

  5. Bake at 350°F for 45-50 minutes until deep golden brown
  6. Check internal temp: should reach 200-205°F when done
  7. Remove immediately and cool on wire rack for at least 1 hour

Ingredients

  • 1½ cups (180 g) vital wheat gluten
  • ½ cup (50 g) oat fiber
  • ¼ cup (30 g) psyllium husks
  • 1 tablespoon (9 g) SAF dried yeast
  • 1 teaspoon (6 g) Celtic or Himalayan salt
  • 1 teaspoon (4 g) sugar
  • 1 tablespoon (15 g) double acting baking powder (zero carbs)

Instructions

1. Mix the Dough

Add wet ingredients to bowl of stand mixer – water, active Biome Boss™ starter, eggs, and oil. Add dry ingredients on top in layers. 4. Score and Bake

Preheat oven to 350°F. Line a baking sheet with parchment paper. Carefully invert banneton onto parchment-lined baking sheet. Gently press whole rosemary leaves onto the surface for decoration. Score down the middle with a sharp knife or bread lame, cutting about ½ inch deep.

5. Cool

Remove immediately from oven when done. Transfer bread to a wire rack. Cool completely for at least 1 hour before slicing to allow crumb to set properly.
